  1. Quoted from Paul Mcartney in the episode of The Simpsons; "Lisa the Vegetarian" , here's a recipe for a ripping Lentil soup:

        Ingredients

        * 1 medium onion, chopped

        * 2 tablespoons of vegetable oil

        * 1 clove of garlic, crushed

        * 1 cup of carrots, chopped

        * 2 sticks of celery, chopped

        * 1/2 cup of lentils

        * 1 bay leaf

        * 1 tablespoon of freshly-chopped parsley

        * salt and freshly-ground pepper to taste

        * 2 1/4 cups of vegetable stock or water

    Directions

    Simmer on medium heat until lentils are tender.


  2. One of my favorite vegetarian recipes is curry.  It can be made with almost any vegetable and contains little fat.  The basics are as follows:

    - heat up some oil in a skillet (I usually use extra light olive oil)

    - add a diced onion and cook till almost translucent

    - add some curry powder, a little goes a long way, and cook for a minute or two

    - add some diced tomatoes, a 14 oz can makes this really easy, heat to a simmer point

    - add whatever vegetables you have on hand and cook till they are done; if they have different cooking times, add them in the order of whichever takes the longest to the shortest

    - another way to tell when the curry is done is when the curry starts to separate from the oil a bit

    Some of the best vegetables, which can all be mixed and matched, are: potatoes, cauliflower, chick peas, okra.  You can also add a hot pepper if you'd like more heat in the dish.

  4. Frozen bananas make a great summer treat. Peel a banana, stick it on a popsicle stick, optionally cover it with peanut butter or some topping of your choosing, and freeze it for a couple of hours.

  5. There's this good recipe called ants on a log its basiclly cellery smeared with peanut butter and topped with raisins.

    There is another one where you peel  a bannana dip it in yogurt and then freeze it.

    Amy's Indian food or Trader Joe's Indian Food (Dal) with rice.

    Veat 'Salmon' (pan fry in olive oil, garlic powder and capers or lemon juice) serve with rice and a salad.

    Hummus, pita bread and a salad.

    Gardenburger Breakfast Bacon - make a BLT add avacado.

    Slice tomatoes in rounds, top with Soya Kaas mozzarella cheese, basil, cut up figs (peeled, washed in hot water to bring out the sweetness) sprinkle with a little olive oil and balsamic vinegar. Leave out to room temp until cheese is 'melted' looking.

    Stir-fry veggies and rice with Tofu - I use extra firm, wrap in paper towels to soak up the excess water. Cut in slices, fry in a little olive oil, hot pepper sesame oil and soy sauce. Sprinkle with ginger, garlic, curry, whatever you have in the cupboard. Top with sesame seeds. You can also top it with sliced veggie cheese and serve on toasted sourdough with mustard.

    Gardenburger Riblets, baked potato, broccoli (w/ lemon, margarine and garlic) and a salad.

    Pasta w/ marinara sauce, if you have Boca Itailan Sausages cut them up and add it to the sauce. Serve with garlic bread - spread butter on bread, sprinkle with garlic powder and brown in a pan, butter side down.

    Clean portobello mushrooms, cut up, saute in olive oil, garlic and a little soy sauce. Serve with salad.

    MorningStar Farms Sausages (not the breakfast ones) are good on homemade pizza - add mushrooms, tomatoes, broccoli, peppers, onions, soy cheese.

    Easy Corn Chowder Soup – 1 can each of White Corn, Yellow Corn and Creamed Corn, including the water from the can. Cut up celery add to the pot, add a little rice dream milk.

    To vegetarian refried beans add mild green sauce. Add soy cheese if desired. Make Spanish Rice – Far East and/or Rice-a-Roni makes it in a box, just add tomatoes. Serve in a burrito, taco or tostada – add lettuce, tomatoes, soy cheese and avacado to the top.

    Quorn turkey roast, with mashed potatoes and a vegetable. Use leftovers on for a 'turkey' sandwich or in soup -

    Vegetarian Chicken Noodle Soup

    6 cups of pure water

    ¾ cup Vegetarian Chicken Soup Base

    6 organic celery stalks, chopped

    1 ½ cups sweet onion

    6 carrots, chopped finely

    1 package organic noodles (rice, corn or barley)

    1 package of Quorn Tenders (or use leftover Quorn Turkey Roast cut up)

    Sauté Tenders lightly in olive oil. Heat water, add soup base, stirring gently. Add vegetables, noodles (consider breaking them into 1-2 inch pieces) and Quorn Tenders.

    Basil, Tomato and Mozzarella Sandwich

    INGREDIENTS

    1 (1 pound) loaf Italian bread

    6 fresh basil leaves, chopped

    2 tomatoes, sliced

    4 ounces fresh mozzarella cheese, sliced (Soya Kaas)

    1/8 teaspoon red pepper flakes

    1/2 cup balsamic vinegar

    DIRECTIONS

    Slice the loaf of bread in half lengthwise. Layer the basil, tomato slices, and mozzarella cheese between the two halves of bread. Cut into four sandwiches.

    In a small dish, stir together the balsamic vinegar and red pepper flakes. Use as a dipping sauce.

  8. for a yummy side dish try, 1 medium size bag of Frozen hashbrowns, 1 cup cheddar soy cheese, 1 small can of cream of mushroom, 1 cup sour cream (optional) , salt to taste,  then mix and bake at 350 for about 45 minutes till lightly brown on top.

    Lettuce   Wraps

    INGREDIENTS:

    2 very ripe avocados

    3 tomatoes, diced

    1/2 jalapeno pepper, diced

    2 tbsp yellow onion, diced

    3 cloves fresh garlic, minced

    1/4 cup fresh cilantro, chopped

    kernels from one ear raw organic corn

    2 tsp fresh lime juice

    6-8 large romaine lettuce leaves

    PREPARATION:

    In a medium sized bowl, mash the avocado.

    Add remaining ingredients and stir until well mixed.

    Spread 2-3 tablespoons of this mixture onto lettuce leaves and wrap. Enjoy!  

    As you can see these are simple and great for children to experiment with. We have these quite often and never quite the same way. Have fun!! Try new things!! You'll be amazed at just how talented you can be when you learn to PLAY in the kitchen.

    (P.S. You gotta have fresh tomatoes added to a lentil soup, can would work too)  Rainbow Sorbet:

    4 frozen peeled kiwi

    1 box frozen strawberries (tops cut off)

    1 frozen pineapple (peeled, sliced)

    6 frozen bananas

    4-6 fresh mint leaves

    3 fresh bananas

    1. Freeze fruit 8-12 hours ahead of time.

    2. In food processor with "S" blade: blend 2 frozen bananas, kiwis, mint and 1 fresh banana in food processor. This is the first layer. Put into a parafait glass, place in freezer

    3. Second layer: in food processor, blend 2 frozen bananas with frozen strawberries and one fresh banana. This is the second later, put on top of first layer, return glass to freezer.

    4. Third Layer: in food processor, blend 2 bananas, frozen pineapple, and one fresh banana and put on top of second layer, garnish with fresh mint and serve immediately.

    8-12 hours to freeze fruit; 20 minutes to prepare; 4-6 servings

    You can just make one layer and eat that. Each layer can be eaten separetely, on it's own. Any fresh fruit can be used- keeping banana as the base.

    Sorbet can be prepared with several machines. The vitamix does fine. The champion and the Green Power can do this as well, using the solid 'blank'.
