I have some beautiful zucchinis from my garden. The problem is that I have no idea how to make zucchini bread.

  2. you can also use zucchini to make relish- just substitute the chopped zucchini for the chopped cucumbers, i do it all the time. you can tell the difference.

    3 eggs

    1 cup vegetable oil

    2 cups sugar

    2 tsp. vanilla

    2 cups coarsely shredded zucchini

    1 cup well drained crushed pineapple

    3 cups flour, unsifted

    2 tsp. soda

    1 tsp. salt

    1/2 tsp. baking powder

    1 1/2 tsp., ground cinnamon

    3/4 tsp. nutmeg

    1 cup chopped walnuts (optional)

    1 cup raisins or currants, vanilla chips or coconut (optional)

    Beat eggs, oil, sugar, vanilla until thick and foamy. With a spoon stir in zucchini and pineapple. Combine flour, soda, salt, baking powder, cinnamon, nutmeg, nuts and raisins, currants, coconut or chips. Stir gently into zucchini mixture just until well blended. Divide batter between 2 greased and floured 9x5 bread pans.

    Bake at 350F for one hour or until toothpick inserted in middle of loaf comes out clean.

    Christine's Zucchini Bread

    Ingredients

    2 eggs, lightly beaten

    1/4 cup sour cream

    1 1/4 cups sugar

    *1 cup vegetable oil

    2 cups zucchini, grated

    2 1/2 teaspoons vanilla

    2 1/4 cups flour

    1 teaspoon baking powder

    1 teaspoon baking soda

    1 teaspoon salt

    3 teaspoons cinnamon

    1 cup chopped walnuts or pecans (optional)

    *For a lower-fat version, you can substitute applesauce for 1/2 of the oil.

    Preparation

    Mix first six ingredients together. Sift dry ingredients together in another bowl. Combine with zucchini mixture and mix well. Add nuts. Mix. Pour into two greased loaf pans. Bake at 350oF for 1 hour. Turn out onto wire racks to cool.

    Makes 2 loaves

  6. DO you have a Betty Crocker cook book. That's the recipe I use and my friend he says she hates zucchini bread, and her hubby who hates anything with veggies in it period both love it when I make some up. When I get up next time I'll go get betty and give her recipe to ya.

    You can also make a zucchini pie. It looks and tastes just like apple pie. My old babysitter used to make it and it was sooooooo good.

          3    Eggs; lightly beaten

          2 c  Sugar

          1 c  Mashed pumpkin

          1 c  Butter; melted

          1 tb Vanilla

          3 c  Flour

          1 ts Baking soda

        1/2 ts Baking powder

        1/2 ts Salt

        1/2 ts Cinnamon

        1/2 ts Ground nutmeg

        1/2 ts Ground cloves

          1 c  Shredded zucchini

          1 c  Chopped walnuts



      Preheat oven to 350°. Grease & flour 2 loaf pans.

      

      Mix eggs and sugar; stir in pumpkin and butter.

      Stir dry ingredients together; add to egg mixture

      and mix well. Stir in zucchini and nuts. Divide

      into pans; bake 45 to 50 minutes or until test

      done. Cool in pans 10 minutes before removing to

      wire racks to cool completely.
