Not easy. I think the usual idea of having kids help clean up a beach or visit the zoo is a bad idea for environmental education.

Marine World (an animal amusement park in California) used to be quite educational for children in that they would always include, for example, Amazon destruction of habitats concerning the animals that were performing in front of them. Unfortunately they don't focus too much on that anymore, opting for more roller coasters and big $ now.

Kids need to be aware of the "kindred spirits" that exist between humans and the environment - one of respect and admiration. Maybe a nature walk.

What I did with my daughter is create homes for small animals like toads, or squirrels.  They're simple to make and it's an art project they can help with.  You could also make and decorate a bird house.  The children can put the resulting project in their backyard, and watch it being used and it will remind them of the lesson.

The lesson being that all living creatures are necessary to have a healthy and sustainable earth.

You could do a recycling demonstration, with several different items and teach them which are recyclable and which are not.  Then you could have them pick out some items from a different set of items to demonstrate their knowledge.

I think that giving each precious child a quart of oil and having them pour it over a baby seal is the best thing to do.  Make sure that you guys drive up in huge SUVs and leave the engines running the whole time you are there.  Also, serve all meals on Styrofoam!  Good luck, I hope this helps.
