  1. Salsa and chips are the starters at most mexican restaurants.


  2. For an appetizer, how about a "tortilla chip pizza".  Spread chips over a large round oven safe plate.  drizzle taco sauce of choice over all. Add some toppings of choice.  I'd put ground beef as a base, then maybe onions, etc. (or just the meat)  Top generously with a blend of shredded Mexican cheese mix.  Put in the oven to melt the cheese.  When serving, make a space in the center to put sour cream, or you can put the sour cream in a small round dish to put in the center. (I guess a microwave would be okay, but I prefer not to use it if I don't have to... the chips stay crispier in the oven.)

  3. How about a Taco Cornbread Pizza?

    1 pkg corn muffin mix

    1 lb ground beef

    1 pkg taco seasoning

    3/4 cup water

    shredded cheese

    Prepare corn muffin mix as directed; pour this into a pizza pan and bake about 10 minutes. Brown meat (you can add garlic, onions, bell peppers etc), drain and add seasoning mixed with water. Sprinkle 1/2 cup cheese on baked crust; top with meat and additional cheese. Bake 5 minutes or until cheese bubbles.

  4. Nachos!  Easy - you can add dips too.  Scrummy and one of my favourite things to eat (I usually grate some cheese onto a plate of nachos and cook in the microwave for a minute then add sour cream, tomato salsa and chopped spring onions - and you could add guacamole I just don't like it)

  5. as a starter, i would make mini taquitos. they are like mini fried tacos, and you can fill them with shredded chicken, pork, or beef. or with hamburger. you could even just use refired beans. corn tortillas make the best taquitos. just fill the tortilla, roll it tightly (use egg wash to stick together. or a toothpick.) then, just fry in some oil until golden and crispy. GOOD LUCK!

  6. Either Quick & Easy Mexican Chorizo (see recipe below) or Black Bean Soup or Tortilla Soup or Quesadilla- with cheese and grilled marinated chicken or steak

    Quick & Easy Mexican Chorizo

    1     lb     pork, ground  

    1     Tbsp     red chile peppers, ground

    (can substitute paprika)

    1/2     tsp     coriander, ground  

    1/4     tsp     cloves, ground  

    1/4     tsp     black pepper, ground  

    1/4     tsp     oregano

    1/4     tsp     cumin, ground  

    2     cloves  garlic, minced

    1     tsp     salt  

    Directions

    Thoroughly mix spices together in a small bowl.  Add to ground pork and stir or knead by hand until spices are evenly mixed. Cover and refrigerate to blend flavors.Wrap unused chorizo in small portions and freeze for later use .

  7. I would go with traditional queso.  but for fun, i might also make some sort of sweet and spicy bread.  Like jalepeno cornbread.   Yummy.

    4 (12 inch) flour tortillas  

    3 ounces shredded white Cheddar cheese  

    3 ounces shredded Monterey Jack cheese  

    3 ounces shredded Cheddar cheese  

    1 tomato, diced  

    1 cup chopped red bell pepper  

    1/8 cup chopped green onions  

    1/3 cup black beans, drained  

    2 tablespoons hot salsa   1/8 teaspoon chili powder

    Method

    Preheat oven to 425 degrees F (220 degrees C). Lightly grease two 12 cup muffin pans. Cut each tortilla into 6 smaller round pieces. Insert the pieces into the muffin tin cups. Heat 4 minutes or until crisp. Arrange the white Cheddar cheese, Monterey Jack cheese, Cheddar cheese, tomato, red bell pepper, green onions, black beans, and chili powder in the cups as desired. Bake in the preheated oven 5 minutes or until the cheeses are lightly brown and bubbly. Top with hot salsa and sour cream

  9. There is Mexican Mexican and Americanized Mexican. I believe you mean the second option because no Mexican would ever think of offering a gringo thing like nachos. Guacamole and chips would be so much more authentic. Another popular one that is used in Mexico are small cocktail sausages smothered in ketchup and lemon juice, with some chopped fresh onion. They taste great. Or dried beef with lemon juice and salsa, rolled up in a soft tortilla, like a taco. On the other hand, Mexicans are so into American stuff, that potato chips and green onion dip are just as acceptable.

  11. Jalapeno poppers is a must. Sweet chilis stuffed with mozzarella and cream cheese.

    (serves 6ish)

    12 medium sized sweet chilis, skinned (grill or dry fry till skin blackens and blisters should  make them easy to de-skin with a sharp knife.)

    Cut the tops off the chillis and de-seed as best you can being careful not to split or pierce the sides.

    Stuff the chilis, to about a cm from the top with a 50/50 mix of mozzarella and philladelphia or similar.

    Use one or 2 cocktail sticks to fold over and pin the top of each chili sealling the cheese inside (if you have kitchen string and can be bothered, sew up the chilis)

    Whisk 2 eggs and put some breadcrumbs in a bowl. dip the chilis in egg then breadcrumbs then egg again and breadcrumbs again (ie. a double coating) then deepfry. Your poppers are ready when they float and golden brown in colour.

    Sound complicated and finnicky but it's surprisingly quick and easy.........d**n tasty too.
