Question:

Any ideas for something simple and low fat I could make with these ingredients?

Rice, pasta, tin of tomatoes, mexican bean burgers, and i could pick up some other stuff on the way home if I have time, haven't got much in the cupboards lol

Also, does anyone have a low fat vegetarian recipe for chilli con carne?

  1. Cook the pasta and make a sauce using tomatoes, basil, garlic, onion, then serve with the burgers. Simple and delish!


  2. TVP Chili

    1 cup tvp flakes or chunks

    1 cup hot water

    1 tbsp ketchup

    ½ large onion, chopped

    ½ green pepper, chopped

    2 cloves garlic, minced

    1 jalapeno pepper, chopped (optional)

    Heat a large Dutch oven, Add:

    1 tbsp olive oil

    Over medium heat, sauté onions, pepper and garlic a few minutes. Sprinkle over the TVP and stir with a fork:

    1 tbsp chili powder*

    1 tsp cumin

    1 tsp oregano

    ¼ tsp cayenne

    Add the TVP to the pan and cook a few minutes. Stir in:

    1 14-oz can tomatoes, coarsely chopped

    1 14-oz can your favorite beans

    1 cup water or beef broth

    Cover and simmer for 30 minutes to one hour. Taste and add salt. If desired, add a 16-oz package of frozen corn during the last 15 minutes.

    * Yes, that is one tablespoon. Mild chili powder gives a lot of flavor without heat.

  4. Actually the rice AND pasta sounds like a bit much together. Maybe consider breaking it up into separate meals. You could do mexican bean burger tacos (with the rice). Just pick up the shells of your choice. Season the tomatoes (to make a quick salsa with some onions, cilantro, a little lime juice & spices). Then throw in any other toppings you like?

    1 tablespoon vegetable oil

    1 cup chopped onion

    1 cup chopped bell pepper

    1/2 cup corn, drained if using canned

    1 can  (15 ounces)  black beans, rinsed and drained

    1 can  (15 ounces)  garbanzo beans, rinsed and drained

    1 can  (28 ounces)  whole tomatoes, undrained

    1 package McCormick® Chili Seasoning Mix

    1/2 cup water

    Sour cream and shredded Cheddar cheese (optional)

    1.  Heat oil in large nonstick skillet on medium heat.  Add onion and bell pepper; cook and stir 2 minutes until softened.  Transfer onion mixture to slow cooker.

    2.  Add remaining ingredients, except sour cream and cheese; mix well.  Cover.

    3.  Cook 4 hours on LOW.  Serve with sour cream and cheese, if desired.

    IMPORTANT:  For best results, do not remove cover during cooking.

    Serving Suggestion:  Serve over rice, or add broken tortilla chips to cooked chili.
