Any ideas on how to make a great home made chipotle sauce?

I love this sauce, i could eat it on everything. I would like to know if anyone has any recipes on some good chipotle sauce. Thanks.

  1. I just take a large can of chipotle chilies in adobo and puree in a blender with 1/4 cup apple cider vinegar. Pour into a s***w top jar and keep in the fridge. The acid in the vinegar is a natural preservative and it will keep for months.


  2. Sweet Chipotle Grilling Sauce --

    "This sweet and spicy sauce is great brushed onto grilled chicken and steaks, it's also great for marinating."



    INGREDIENTS

    2 chipotle chilies in adobo sauce

    2/3 cup maple syrup

    2 cloves garlic, peeled

    1 tablespoon soy sauce

    DIRECTIONS

    Place chilies, maple syrup, garlic, and soy sauce into a blender. Puree until smooth.

    Steaks with Chipotle Sauce --

    Unused chipotle peppers can be frozen. Individually freeze the peppers with some sauce on a lined baking sheet, then store in a resealable plastic freezer bag for up to 3 months.



    INGREDIENTS

    1 (7 ounce) can chipotle peppers in adobo sauce

    1/2 cup sour cream

    1 teaspoon dried cilantro flakes

    4 (8 ounce) New York strip steaks

    DIRECTIONS

    Chop one chipotle pepper; place in a bowl. Add 1 teaspoon of the adobo sauce. Stir in sour cream and cilantro; refrigerate. (Save remaining peppers and sauce for another use.)

    Grill steaks, uncovered, over medium-hot heat for 6-10 minutes on each side or until meat reaches desired doneness (for medium-rare, a meat thermometer should read 145 degrees F; medium, 160 degrees F; well-done, 170 degrees F). Serve with sauce.  

  3. 5 ounces blue cheese, crumbled

    3/4 cup heavy cream

    3 tablespoons pureed chipotle peppers in adobo sauce

    2 tablespoons chopped fresh chives

    Crumble blue cheese into a bowl, and mash with a fork. Pour in cream, and stir until smooth. Then transfer to a saucepan, and gently cook over low heat until warmed through. Remove from heat, and stir in pureed chipotle peppers and chives.


  4. Try this recipe... my dad loves them too, and he loves this sauce:

    1/2 cup BBQ sauce

    1/4 cup canola oil

    3 tablespoons lemon juice

    1/2 ounces Dijon mustard

    3 tablespoons chipotle pepper in adobo

    1/2 teaspoon red chili flake

    1/4 teaspoons cayenne pepper

    1/4 teaspoons black pepper

    You can always add more chipotles, as much as you want.  I hope you like it!  :)
