  1. do you know marag?? its a mughlai dish. tastes very nice. but u need to have butter naans with it.

    Ingredients with preparation:

1 med onion(preferably red) - blend to a smooth paste

5 serrano chillies - blend with 1/2 cup water and strain and set aside the juice(throw away the residue)

2/3 bunch cilantro leaves - finely chop and mix with 1 1/2 cup water and microwave for 2 mins

    Ingredients:

    1 lb lamb stew(with bones)

    2/3 very generous cup yogurt

    2/3 tbsp ginger paste

    2/3 tbsp garlic paste

    1 tsp cumin seeds

    1 stick cinnamon

    1 bay leaf

    2 cardamom pods

    3 cloves

    10 peppercorns

    1/4 tsp black pepper powder

    1/2 garam masala

    1 tsp(or to taste) salt

1 tbsp ghee(don't even think about skipping this..it totally gives the flavor this dish needs)

    1 tbsp olive oil

    Procedure:

Heat the ghee and oil in a pressure cooker and add all the spices(cumin, cinnamon, bay leaf, cardamom, cloves and peppercorns) till they start to slightly become brown. Add the onion paste and fry for 2 mins and then add ginger-garlic paste and fry for a few more seconds. Add the meat and the yogurt and fry for 5 mins. Keep stirring while frying...the yogurt has a tendency to splash when hot. Add the chilli water and the coriander water along with the salt, black pepper powder and garam masala and mix. Add more water at this point if you want it soupy. I added 1 more cup. Tighten the lid on the cooker and cook for 30 mins on low and tae it off the stove. After the pressure is released, open the lid...and that's it!! You're done!!
