Question:

Any one got ideas for dinner tonight

My boyfriend has been away all week and I'd like to cook something nice but EASY.. Something with chicken or mince recipes would be great

  1. I know Spag' Bol is a bit of a culinary cliche, but it's easy and uses mince. If he's been away as long as a week, dare I suggest that he's going to need some red meat for later?

    BOLOGNESE SAUCE

    Enough for spaghetti for 2

    INGREDIENTS

    2 cloves of garlic

    2 onions

    1 tablespoon of olive oil

    500g of minced beef

    400g tin of plum tomatoes*

    1 beef stock cube

    2 teaspoons of oregano or mixed herbs

    Ground pepper to taste

    METHOD

    Peel the garlic and chop it into tiny pieces. Peel the onions and chop them into tiny pieces.

    Put the oil into a frying pan on a medium heat. Add the garlic and onion. Fry the garlic and onion for about 2 minutes. Stir frequently to stop it sticking.

    Put the meat into the pan and fry for 2 to 3 minutes, stirring all the time. By this time, it should have broken up and be an even colour, with no pink bits.

    Open the tin of tomatoes. Pour the juice into the pan. Chop the tomatoes while they are still in the can (it’s easier than chasing them around the pan).

    Pour the chopped tomatoes into the pan. Crumble the stock cube into the pan. Add the herbs. Season with the pepper. Mix thoroughly. Continue to cook, stirring as the mixture boils, until the sauce has reduced.

    ADDITIONS & ALTERNATIVES

    Use minced lamb, pork or turkey instead of minced beef.

    Serve with grated Parmesan cheese.

    TIPS

    Always “take the pasta to the sauce”. Put the cooked pasta in the pan with the sauce and stir together until thoroughly coated.

    * Plum tomatoes can be used either whole or chopped. It is difficult to stick chopped tomatoes back together again if you need to use them whole.

  3. Ziti Chicken and Broccoli

    INGREDIENTS (Nutrition)

    1 pound dry ziti pasta

    3 cloves garlic, chopped

    2 tablespoons butter

    1 pint heavy cream

    1 (10.75 ounce) can chicken broth

    1 cube chicken bouillon

    1/4 cup grated Parmesan cheese

    salt and pepper to taste

    3 tablespoons cornstarch

    2 large heads broccoli, steamed

    1 (14 ounce) can artichoke hearts in water

    6 breaded and fried skinless, boneless chicken breast halves, chopped



    DIRECTIONS

    In a large pot of salted boiling water, place pasta and cook for 8 to 10 minutes, until pasta is al dente. Drain.

    In a large skillet, saute garlic in butter over medium heat. Stir in the heavy cream, chicken broth, and bouillon. Add Parmesan cheese, salt, and pepper. Add cornstarch (adjust amount to thicken sauce to your liking). Simmer all together for about 20 minutes.

    Once sauce is cooked and thickens, add broccoli and artichoke hearts, stir all together and cook for another 2 to 3 minutes. Once sauce is done, put cooked ziti pasta in a large bowl, pour sauce over pasta and toss to coat and mix. Then add the chicken pieces and mix all together. Serve. Delicious!

  4. I'd try Eritrean lamb stew, it works well with chicken but lamb is best, it's very easy to make and is absolutely delicious-spicy but not hot. You'll need to make some (also easy to make) berbere sauce before you start so follow the first link for that recipe and don't be put off by the list of ingredients, just go to the supermarket before you start. Chicken in a big pot with whatever veg you have left in your fridge (tomatoes, courgettes, whole garlic cloves), a splash of olive oil and any basil if you have it and put in the oven for an hour.  You can tip some cannellini or red kidney beans in there too for a more substantial meal or make some mashed potatoes or smash to go with it.

    For mince, what about that old scottish favourite mince and tatties.  Brown your mince, drain the fat, fry it with an onion, some diced carrots (optional) 1/2 pint of beef stock.  Boil potatoes - serve and enjoy (can do some frozen peas in the microwave to go with it too).

  11. Well I dunno if this will sound good to you....but I have been cravin a BLT :)

  12. Chicken in a mushroom sauce with rice.. sooooooo easy ..  cube chicken.. pan fry with mushroom and onion till cooked.. add a tin of cambells condensed mushroom soup and a little water to make to right consistency... serve on a bed of rice :o)))  yummy

    knife it, and introduce a few pieces of garlic in the flesh. (cut the clove in half so the aroma get out).

    put a few more garlic and herbs (fresh rosemary, thym) inside the chicken...put some olive oil...salt and pepper...

    oven for 2 hours... poor a small glass of luck warm water over the chicken every 20-25 minutes...so the chicken is nice and tender. (alternatively, you can use the sauce from the plate, and poor it back over the chicken).

    Serves with some french green beans, and a few potatoes with some butters, herbs.

    Try pasta bolognaise or Chicken and veg in a light sauce with pasta, serve with salad and garlic bread, set the table all romantic with candles and a flower and your away.

    Its amazing I can eat it forever and add some veggies like green beans, it goes perfect as a side (:

    Cook the chicken in the oven with the mushroom sauce on top and then make the rice and scoop the mushroom sauce on top of the rice

  19. I'm doing tacos with spicy mince tonight. Really easy. We have them with grated cheese, salad, doritos and dips. Great for sharing and really quick and easy. You could do this with chicken too.
