There's a lot to see and do, depending on how much time you have. You should plan at least 2-3 weeks so you can go trekking. The treks listed in the previous answer are all popular ones, but I would recommend the Annapurna region. It's easier to get to, you can get around more easily, and it's more interesting. There actually isn't that much to see at Everest base camp, and the places on the route there are very crowded and expensive.

Last time I was in Nepal (1998, a while ago), I spent 3-4 days in Kathmandu and about 10 days trekking. Three or four days is definitely all you need for Kathmandu. You should see Pashupati temple, Bodha stupa, Durbar square and the nearby town of Bhaktapur. When you're in Durbar square don't forget to go to the palace of the Kumari -- she's a little girl who is believed to be the incarnation of a goddess. She is supposed to be secluded in the palace, but if you slip the guard 50 rupees or so he will call her out to the window and you can see her. Also, if you can arrange it, try to see a Hindi movie in Kathmandu. The atmosphere is great, and even though you might not understand a word that the actors are saying, the plot will be clear enough.

On my trek, I took a bus to Pokhara, stayed there overnight, and then flew early in the morning to Jomsom, which is a little landing strip in the mountains, around 10,000 feet. I think that same morning we hiked up to Kagbeni, which is an amazing, windy village with old temples and lots of artificial streams and stone bridges. The next day we went up to Muktinath, which is a Hindu pilgrimage site where jets of flames and natural gas shoot out of the ground. On the way you'll pass some amazingly varied scenery. After Muktinath we hiked back down to Pokhara, staying at different villages along the way. The whole thing took about 10 days. For the most part, the trail is very well marked. Unlike mountain trails in the US, the trails in Nepal are not at all isolated. There are people coming up and down all the time, both locals and tourists. There are no roads up there, so the trails are the main highways.

If you have even more time, head down to Royal Chitwan park, where you can take a jungle hike or elephant ride and see hippos, rhinos and other wild animals. This is also a nice place to rent a bike and ride around the villages. Four or five days should be enough there.

A lot has changed in the country since 1998, so you should definitely check with a travel agent or trekking guide to confirm anything here. There is a civil war going on in some parts of the country, and there is always a chance that even the capital could be crippled by a general strike. Make sure you are very well informed before you go.

Also, if you can try to pick up some of the language before you go, you'll endear yourself to the already very friendly locals.

(1) The Kathmandu, The capital city of Nepal. I like to call this city the city of temples

(2) Pokhara, A paradise on earth, mind blowing vista of mountains here. You will remember them for life!

Start out in Kathmandu but be sure to get out in the countryside like to Dhurikel area for the most beautiful sights on the mountains and the large open countryside.  The memories will last a lifetime.  I'll be there in the next few weeks and can't wait.  Wonderful people and great food.
