I don't know anywhere around Surbiton I'm afraid, but the best vegetarian restaurant I've been to was Manna in Primrose Hill.  http://www.manna-veg.com/menu.html

It was a fantastic and very memorable meal, in fact I'm salivating slightly thinking about it.... I'm sure it would impress your date!

There is one on the riverside as you go into Kingston, its a good place to go and nice and smooth:
