I live in Maryland; my garden gets full sun. I am already growing tomatoes, cucumbers and radishes. I don't want to plant squash.

  1. You can grow leafy vegetables such as lettuce, chinese choi sum, or spinach and get a harvest within a month. Tobacco might also make it in time if you are a smoker and want to produce your own.

  2. collard greens are a fall crop, as are lettuce and beets.  I just planted all of these yesterday as well as some peas just to see if they'll grow (peas are an early spring crop).

  3. Broccoli, Swiss Chard, Kale, Greens, Spinach, any kind of lettuce.

  4. cole crops: cabbage, broccoli, cauliflower, collards, mustard greens

    peas: english or snow

    spinach

    lettuce

    second plantings of radishes

    beets

    onion

    turnips

  5. Kayle is decorative and edible and can be picked thru the snow all winter. Cook it like cabbage. It  is a little tough. Restaurants use it for a garnish.

Also Rhubarb Chard will give you a crop until frost, it has red stems, cooks like spinach. Pick a few leaves off each plant and it keeps producing.
