  1. This requires research (on your part - since you do not list the ports in your question).  I suggest joining one of the online forums, such as Cruise Critic or Cruise Addicts.  You can also book shore excursions through Shoretrips.  Here are the links ...

    http://www.cruisecritic.com/

  2. First of all, have a look at the excursions available on the cruise ship you are sailing on. That gives you an idea of what is on offer at the ports you are landing at.

Go to http://www.cruisecritic.com (in my opinion the best web site for information on cruising) and look at what other people have done on the same itinerary. You can post questions asking about self booked tours etc:

Another source of information is the tourist information sites of the countries, ports and cities you will visit.

  3. book them prior to the cruise

    another good site is

    www.ytb.com/thetravelblackbook

  4. As soon as you get off the ship, right at the docks or pier will  be a bunch of shore excursions to choose from. The main question to ask them is what time do they return back to the ship. If it is close to saling time, I would not risk it as I have seen people miss the ship on every cruise I have been on.

  5. I booked my excursion from the same web site as I booked the cruise.  You can also go to the cruise line web site and read the descriptions and price of each event.  You can also book excursions on the ship.  My suggestion is to get the excursion you know you want right away as they may get filled.
