Any tips on freezing jalapeno peppers? I froze some and when thawed the seeds were black and pepper was mushy?

  1. Peppers, both hot and sweet, are very easy to freeze.  No prep is required other than washing them thoroughly.  But they will become mushy after they are thawed out.  (It has to do with the moisture within the cells expanding when frozen and breaking the cell walls, but that's probably more than you want to know.)

    Jalapenos can be frozen whole, or sliced in half with the seeds removed.  Bell peppers are usually cut into strips or chunks before freezing.  Peppers that are frozen are best used in recipes where they will be cooked.  Cooking will soften them too, so being mushy after thawing isn't an issue.

  4. Flash freezing in hot ice is the best way but not easy to get. Or you could place them on a pizza oven pan and warm them in 250 degrees for about 10 min. and then put in your freezer. This is the easiest way and just like putting a ice tray of hot water in the freezer, it will freeze faster than cold water and will preserve the peppers better.
