Any vegetarian meal ideas?

Like simple meals that are quick to do. Thanks I have been a vegetarian for like a year now but would like some new ideas!

  1. I can't get enough of quorn - especially those d**n sausages.  


  2. Ingredients:

    1 bag pasta

    1 bunch spinach

    onion

    garlic

    canned tomato

    coriander

    basil

    mixed herbs

    cracked pepper

    salt

    method:

    1 boil the pasta and drain when cooked.

    2 chop up carrots, onion, spinach and herbs

    3 saute the onion with some olive oil. add the large can of tomatoes, herbs, garlic, cracked pepper & salt. Cook on stove top for a few minutes.

    4 put all the pasta in a large oven tray, add spinach, carrots & sauce.

    5 cover with foil and cook in the oven for 20 minutes.

    You can add vegetarian cheese too if you like

  4. fry some vegetables, add some curry sauce and some quorn if you fancy, mix together and eat with rice/noodles whichever you fancy.

    cook some pasta, add tomato sauce and melt balls of mozzarella in it.

  5. do egg fried rice - i use ready made rice

    a stir fry pack of veg

    sesame seeds or cashew nuts

    an egg or two

    and thai sweet chilli sauce

    make the rice ready and leave it on the side in a bowl

    brown the seeds or nuts and then add in the veg

    pour all of that into the bowl with the rice

    crack the egg into the wok and leave it for 30 secs then stir it up

    add everything else back to the wok and cook for a min or two

    then stir in sweet chilli sauce and serve

    do bean wraps

    get a tinned bean mix with some other veg and a bit of cheese and fajhita wraps

    cook the beans in a pan and then dish out evenly into how ever many wraps you're using

    sprinkle over some cheese

    close the wraps and seal with cocktail sticks and cook in the oven for 10 minss

    Brown Rice Risotto

    200g brown rice, washed

    400ml water

    1 medium onion

    ½ red pepper

    200g sunflower seeds

    Mixed herbs to toss

    Pinch salt

    100g sweetcorn/frozen peas

    Soya sauce to taste

    1. Cook the chopped onion in the oil to soften, wash rice and drain well, add to the onion and cook for several seconds turning with a fork.

    Add the hot water in which the soya sauce and herbs have been mixed.

    Bring to the boil and simmer gently.

    2. After 15 mins add the chopped mushrooms and sweetcorn/peas and simmer for a further 20 to 25 mins until the rice is cooked.

    3. Season to taste, top with toasted sunflower seeds and serve.

    The addition of chopped red pepper gives colour to the dish.

  7. Have you tried veggie enchaladas? (sorry if it's spelt wrong!).

    I don't know if you've tried quorn mince? If you just fry that with some mushrooms and onions for like 10 mins, then use a tomato pasta sauce. Then just put it in fajitta's, and sprinkle cheese on the top and put in the oven until crispy!

  8. You can't beat a lovely baked potato don ein the oven, with low fat Cottage cheese, baked beans, a splash of worcestshire sauce, sprinkling of chives and seasoned well.  Low fat, yummy and of cause meat free!

  9. nachos are great for vegetarians or for non vegetarians cause you can add what you fancy to them like peppers sweetcorn, onions, top them with the nacho sauce and loads of cheese yummy.

    garlic potatoes are a nice dish - slice potatoes thin cover with cream/milk garlic and top with cheese if you like yum.

    Veggie burgers are yummy and you can add stuff you would to a normal burger.

    i'm not a vegetarian but personally i think any dish can be made vegetarian just substitue the meat with veg or quorn or fish.

  11. i really like noodles and they are easy!! soup is good too and you can add what you like, my favourite is Thai noodle soup and if i can do in a school lesson at the age of 13 anyone can!! contact me for any recipes: pasta, noodles, soup, bean burgers (my friends mum's recipe, she also makes really nice folaffle(?)....)

    Cook and fry a large portobello mushroom and make a burger.

    Stir fry and season rice/couscous/quiona, beans, and vegetables.

    Bean, rice, & veg cheese burrito, taco, or quesadilla.

    Quick cassorole, mix your favorite veggies choped together with olive oil and fry, add nutrional yeast sauce; with vegan margerine mix together with breadcrumbs and put in a cooking dish poor mixed vegies onto it and then cover with more of the breadcrum mix and top layered with green beans and cook for 10-40m or replace breadcrumbs with pasta of your choice

    Vegan fish tacos, grill tofu and wrap in seaweed dazzle with olive oil and wrap in tortillas with lettuce and dressings of your choice

    Bake a potato add your fixings, make a bbq potato with bbq sauced setien, a broccli and cheese potato with brocli, vegan cheese, and vegan butter, etc

    Cook cauliflower, squash, broccli, and peas together, mush slightly add vegan cream cheese, or vegan sour cream, or vegan butter

  13. I made this yesterday - it was very good.

    Mediterranean Couscous with Black Beans and Feta

    Ingredients

        * 1 tbsp (15 mL) olive oil

        * 1 medium onion, chopped

        * 1 clove garlic, minced

        * 1 sweet red or green pepper, chopped

        * 1-1/2 cups (375 mL) cherry or grape tomatoes, halved

        * 1 can (19-oz./540 mL) black beans, drained and rinsed

        * 1/2 tsp (2 mL) salt

        * 1/2 tsp (2 mL) crumbled dried oregano

        * 1/4 tsp (1 mL) black pepper

        * 1/2 cup (125 mL) brine-cured black olives, pitted and halved (optional)

        * 2 cups (500 mL) couscous

        * 2 cups (500 mL) vegetable broth, heated separately to boiling

        * 2 cups (500 mL) torn spinach (or baby spinach leaves)

        * 1 cup (250 mL) crumbled feta cheese (optional)

    Cooking Instructions

       1. In a large saucepan or Dutch oven, heat the oil over medium heat. Add the onion and garlic and cook, stirring, until softened – about 5 minutes.

       2. Stir in the chopped pepper and continue cooking, stirring occasionally, until tender – 5 to 8 minutes. Add the cherry tomatoes, black beans, salt, oregano and black pepper. Stir to mix, then add the olives and couscous and stir just until everything is heated through and well combined.

       3. Pour in the broth, stir, then sprinkle the feta cheese and the torn spinach on top. Remove the pan from heat, cover tightly, and let sit – undisturbed – for about 5 minutes or until the couscous has absorbed the liquid and is tender.

       4. Just before serving, stir gently to mix. Serve hot or at room temperature.

    Servings: 4

    pasta (farfelli bow shaped), mushrooms, creme fraiche, parmasane, courgette, onion (add how much of each you want)

    boil pasta, the fry other ingredients in the mean time and add remember to add the creme fraiche and parmasane towards the end.
