Question:

Any vegetarian recipes?

im a vegetarian and there isnt many things out there that i know of that are vegetarian so does anybody have some ideas for a vegetarian dinner, breakfast, or lunch? thanks in advance!

  1. Here are some good recipes:

    Stir fry- You need cut up tofu, soy sauce, olive oil, steamed veggies, and cooked rice

    Get a frying pan and coat it with olive oil. The put the tofu in the pan and brown each side of it. Next, add the veggies. Add a little soy sauce and put in the rice. Mix everything up and then let it sit on the stove, occasionally stirring it to make sure it doesn't burn. After about a minute and a half of that put it in a bowl and enjoy!

    Hummus- chick peas, lemon juice, paprika, cumin, black pepper, and any other spices/seasonings you like

    Puree the chick peas. Then add a little lemon juice, paprika, pepper, and other spices. Then stir. Serve with a pita, with cucumbers, or on a veggie wrap.

    Veggie Wraps

    Whole foods is a great store for vegetarians/vegans, so I recommend grocery shopping there. You also can get a lot of the things I listed above there.

  3. I just bought Cooking Light magazine and there's 2 great recipes that stuck out for me, in your case. Hope you enjoy them!

    Sweet Corn and Squash Soup

    Ingredients

    1 T. butter

    2 c. chopped onion

    4 c. fresh corn kernels

    3 c. water

    2 c. chopped yellow squash

    1/4 t. salt

    1/4 t. freshly ground black pepper

    1/4 c. green onion, sliced

    1. Melt butter in a Dutch oven over medium-low heat. Add onion to pan; cover and cook 10 mins. or until tender, stirring occasionally. Add corn and next 4 ingredients; bring to a boil. Reduce heat and simmer 15 minutes. Let cool.

    2. Place half of corn mixture in a blender. Blend until smooth. Strain corn mixture through a sieve into a large bowl; discard solids. Repeat procedure with remaining mixture. Garnish with green onion.

    Southwestern Confetti Salad

    Ingredients:

    1 c. cooked brown rice

    1 c. fresh corn kernels

    1 c. coarsely chopped zucchini

    1 c. grated carrot

    1/2 c. diced plum tomato

    1/3 c. diced red bell pepper

    1/4 c. chopped green onion

    2 T. diced red onion

    2 T. chopped fresh cilantro

    1 T. fresh lime juice

    1 T. canola oil

    1 T. minced, seeded, pickled jalapeno peppers

    1/2 t. kosher salt

    1/2 t. chili powder

    1/4 t. freshly ground black pepper

    1 (15 oz.) can black beans, rinsed and drained

    1. Combine all ingredients in a large bowl, stirring well to combine. Cover and chill at least 1 hour before serving.
