  4. My favorite is guacamole and hummus. My recipe is killer yet so simple! Everyone will not stop eating it. I'm making a new friend some quick recipes. She ate my food and decided to try a vegetarian diet - lol. I could email it to you also, just email me with an email address.

  5. I'm vegan now but was veggie for many years and I love to cook, I use a lot of tofu, tempeh, TVP (great in burritos, tacos, chili), gimme lean (for veggie loaf, veg burgers and "meat" balls). Here's a tofu tip: drain it-- wrap in towel and put something heavy like a couple cookbooks for about half an hour. Then it will take your marinade better and tofu cook up nice and brown.

    If you can splurge and buy white truffle oil, do it! Just a tiny bit on roasted veggies and potatoes makes them very decadent. Add a little rosemary and black pepper and it's even better.

    I eat a big variety of food but there are definitely staples:

    Tempeh salad: Marinate tempeh in 2T soy and 1T rice wine vinegar. Steam tempeh for 15 minutes, let cool. Add mayo, green onions, celery, carrots and whatever else you might like! Great in a pita with fresh spinach.

    BBQ Tempeh: steam like above but add BBQ sauce, onion, pepper.

    Stir fried tempeh: I eat varities of this for lunch frequently. Steam up tempeh and whatever veggies you want. Toss in wok or saute pan and stir in a sauce: black bean garlic, soy sauce with sesame oil, peanut saute sauce, curry paste, anything! I go to the Asian store and pick out random sauces.

    Veggie Stack: layer veggies such as eggplant (sometimes I fry the eggplant ahead of time), zucchinni, mushrooms, roast garlic, spinach, onions with tofu ricotta recipe from Vegan w/a Vengeance (it is great) and tomato sauce. Sometimes I splurge and also layer non-dairy cream cheese (but you can use regular). You could top with cheese too. Bake in an oiled baking dish at 350 for about 25-35 minutes.

    Quiche from my non-vegan days: 3/4 cup cottage cheese, 3 large eggs whipped together with a pinch or two of nutmeg and dill, salt & pepper to taste. Sautee up some veggies and put in prepared crust (you can add cheese now too), top with egg mixture. Bake at 350 for 45-50 minutes.

    Coconut-curry encrusted tofu: drain tofu and marinade in soy sauce or Braggs with a little rice wine vinegar, chinese 5 spice and grated ginger. Let sit for at least a half hour. In shallow bowl mix coconut and curry powder with panko til desired taste. Slice tofu and press into panko mixture. Bake at 350 about 20-25 minutes. You can encrust tofu with many different things like crushed nuts, seeds.

    Tofu salad: drain extra firm tofu then crumble tofu and mix with mayo, 1 t mustard, dill, onions, relish. Really tastes like egg salad.

    Stuffed portabella with mashed potatoes and spinach.

    Linguine: This is great warm or cold and perfect for summer. Chop tomatoes and mix with torn pieces of basil and brie (about equal amounts), then add olive oil, balsalmic vinegar and salt and pepper. Don't refrigerate but let marinate for a good couple hours. Mix with the linguine, again I like it in equal parts (not too much pasta). That's it, you're done! I used to take this to potlucks and everyone loves it (we used to make this at a restaurant I worked at).

    My fave cookbook is Vegan with a Vengeance and this website I love: www.fatfreevegan.com. Even though you're not vegan you could get some great ideas. I make a lot of recipes up, some work out, some don't but it's always fun trying.
