Agility, speed, explosiveness, all that. Anything you have that can help with any part of the wide receiver position.

  1. Run the shuttle. I also have heard of some nfl players practicing catching balls while standing on one foot on a trampoline.

  2. backpedal 10 yards and explode for another 10 yards

have someone lob a ball in the air kinda deep and catch it with one hand

  3. side stepping 20 yards as fast as you can and and practice breaks in a route. being able to run proper routes and breaking well makes or breaks a wide out

  4. When I played in HS, our coach would throw the ball at our backs, and tell us to turn around right before the ball hit us, it was great for us to acquire the ball quickly. It really helped teach us to wheel around with our hands up, in a position to catch the ball.

He also had us running routes until we were crisp. Basically running ten yard routes, and pivoting in a manner that doesn't give the route away. It takes getting used to, because ten yards gets you up to speed, and at first it is really difficult to make your cut. You want to start at 1/4 of your maximum effort, and as you become comfortable, step it up. If you can perfect route running, speed is not as big a factor, because you will get that separation that you need.

Those were our two major drills, and they worked great. If you run a few crisp routes, even if you aren't thrown the ball yet, you will have that corner biting on any head-fake, difeintfient that you give. which will get you separation for the deep pass.

Hands are a must, though. you have to practice, practice, practice catching with your hands, and not your body. you will lose your job quick trying to catch the ball with your body.

I used to also stand about 5 yards from a brick wall and throw one of those small basketballs at the wall as hard as I could, and practice catching it to work on hand strength and speed.

You definitely don't want to under-estimate the physicality, and necessary contact associated with that position though. You have to be willing to through a hard elbow into a rib cage on a crack block, and wake up that corner to you. Basically, as a wide receiver, catching the ball is a plus, but unless you have top notch speed, you should focus on the intangibles, and then work on your catching drills. Just my two cents...
