Question:

Anybody Know How to Make a Cottage Cheese Salad?

When I grew up in Iowa in the 60's and 70's, I used to eat cottage cheese with green onions and I believe chopped carrots and probably some other stuff. I swear that Anderson-Erickson used to sell it. My sister doesn't remember anything but the green onions. She said the trick was to add sour cream. We tried that, but it's still missing something. Any help?

  1. I found this recipe:

1 (16 ounce) carton cottage cheese

1 (3 ounce) package strawberry Jell-O gelatin dessert, dessert (DRY)

1 (20 ounce) can crushed pineapple, drained

1 (8 ounce) carton Cool Whip

    Directions

1In a large bowl, mix cottage cheese and (DRY) Jello well.

2Add the drained pineapple and mix well again.

3Add Cool Whip and MIX WELL.

4Refrigerate about 30 minutes before serving.

    Good luck!

  2. in a carton of cottage cheese add:

    1/2 cup grated carrots

    1/2 cup chopped fresh chives

    1/2 cup finely chopped celery

1/2 cup finely chopped bell pepper

    1/2 teaspoon white pepper

Stir all together and let blend for a couple of hours. I like to add some salt to mine also or maybe celery salt.

You don't have to be very exact with the measurements of the veggies. And you can add chopped parsley also for more green!

  3. My Mom made it with dried onion, dried bell pepper and I believe 1/2 cup of miracle whip.  You had to make it the day before you were going to serve it.  It did not taste the same if you didn't use the dried veggies.

It was different and I still remember eating it.
