    ORIGINAL CHOCOLATE CHIP

    2 3/4 cup flour

    1 tsp. salt

    1 tsp. baking soda

    1 cup margarine

    3/4 cup brown sugar

    3/4 cup sugar

    1 tsp. vanilla

    Egg Replacer equivalent of 2 eggs (Ener-G Egg Replacer works best, but you can also mix together 2 tsp. cornstarch and 1/4 cup water)

    12 oz. semi-sweet chocolate chips

    • Preheat the oven to 350 degrees F.

    • In a medium bowl, mix together the flour, salt, and baking soda.

    • In a large bowl, cream together the margarine, brown sugar, sugar, vanilla, and egg replacer mixture. Stir in the flour mixture and mix well. Add the chocolate chips and mix.

    • Drop the dough by spoonfuls onto a lightly oiled cookie sheet and bake for 8 to 10 minutes. Cool on a wire rack.

    Makes approximately 40 cookies

    PEANUT BUTTER

    1 1/2 cups flour

    1 tsp. baking soda

    1/4 tsp. salt

    1/2 tsp. baking powder

    1/2 cup soy margarine, softened to room temperature

    1 cup crunchy peanut butter

    3/4 cup sugar

    1/2 cup light brown sugar

    1/4 cup soy milk

    1 tsp. vanilla

    • Preheat the oven to 350ºF.

    • In a medium bowl, mix the flour, baking soda, salt, and baking powder.

    • In a large bowl, cream the margarine and peanut butter with an electric mixer until smooth and fluffy. Add both of the sugars and blend well. Add the soy milk and vanilla and blend again.

    • Add 1/3 of the flour mixture to the margarine mixture and mix well. Continue with another 1/3 of the flour mixture, then the final 1/3, mixing after each addition.

    • Roll the cookie dough into 1-inch balls and place on a greased cookie sheet. Allow room for the cookies to spread. Press down twice on each cookie with the back of a fork, making a crisscross pattern on top, but not flattening it.

    • Bake the cookies for 10 to 12 minutes, until light golden brown. Remove from the oven and cool.

    Makes 12 medium cookies or 2 dozen small cookies

  3. Well, this is vegan, but I don't know how healthy it is. It's regular sugar cookies, only without dairy or eggs. It's easy and they taste just like regular sugar cookies.

    2 3/4 cups flour

    1 tsp baking soda

    1/2 tsp baking powder

    1 cup (vegan) margarine (I use Blue Bonnet Lite, even though they say not to use it for baking, b/c it's cheap and vegan, as opposed to expensive and vegan [Smart Balance, etc])

    1 1/2 cups white sugar

    1 tsp vanilla

    2 oz applesauce (if I don't have any applesauce on hand, I just skip this and the cookies turn out the same)

    Mix the dry ingredients. Mix the butter and sugar, then, in the regular recipe you add eggs and the vanilla. I just skip the eggs, and sometimes substitue applesauce, or maybe a splash of vinegar, but even if you don't they still come out fine. Then mix wet and dry ingredients and roll out the dough, adding flour if it's too sticky. You can roll balls and flatten them or use cookie cutters. Bake at 375 for no more than 8 minutes.

  4. Just wanted to let you know that you can turn any cookie recipie vegan!

    All you have to do is substitue the ingrediants for vegan ones.  Substitues white flour with rice flour, milk with rice milk, butter with vegan spread and eggs with egg replacer!

    and it always works for me.  If your cookie dough is too soft and runny add more four and a banana for binding.

    (The only cookie I have isues with is shortbread, its hard to master)
