Anybody have a good simple dinner idea in mind? Please not chicken?

I just had chicken last night for dinner, and I am making dinner tonight. I have no idea what to make, but I pretty much have about every ingredient you could ask for.Something intermediate or easy? 5 stars for best answer!

  1. a lasagna, cottage pie or spaghetti bolengse


  2. Fried Beaver Tail  

          2    Beaver tails                       1/4 ts Pepper

        1/2 c  Vinegar                            1/4 c  Butter

          1 tb Salt                               1/4 c  Sherry or cooking wine

          2 ts Soda                                 1 ts Dry mustard

        1/4 c  Flour                                1 ts Sugar

        1/2 ts Salt                                 1 tb Worcestershire sauce

    Skin beaver tails, clean thoroughly and wash well in a solution of salt   water. Let soak overnight in cold water to cover, adding 1/2 cup  vinegar and 1 tablespoon salt to water.

    The next day, remove from the brine, wash, then cover with solution of  2 teaspoons soda to 2 quarts water. Bring to a boil, reduce heat and simmer 10 minutes. Drain.

    Dredge beaver tails in seasoned flour.

    Melt butter in heavy fry pan and saute tails at low heat until tender.

    Mix wine with mustard, sugar, garlic powder and Worcestershire sauce.

    Add to beaver tails and simmer gently for 10 minutes, basting frequently.

    SIMPLE LASAGNA

    preheat oven to 350 degrees

    ingredients

    1 and a half pounds of ground beef

    1-26 oz can spaghetti sauce (any type or flavor you prefer)

    12 oz shredded mozzarella cheese

    24 oz small curd cottage cheese

    1 pound UNCOOKED  lasagna noodles ( i prefer the oven ready type in the 12 oz package)

    this is great cause you do not pre cook the noodles at all!

    first brown the ground beef in a pan,when done drain excess grease off.

    then in a 13x9x2 pan layer sauce (i use 2 -- 26 oz cans but i cook for a big family) then noodles then meat then cottage cheese then mozzarella cheese then noodles then sauce then meat then cottage cheese then mozzarella cheese then top with noodles

    then sauce being sure to cover the noodles and end with mozzarella cheese on top

    do not worry about getting noodles to the edges of the pan as they will expand

    bake at 350 degrees for 45 minutes

    serve with garlic bread and a tossed green salad for a great meal!! good luck!

    Ham & Potato Bake

    1  lb. Yukon gold potatoes, sliced

    1  8-oz. tub light cream cheese spread with chive and onion

    3/4  cup milk

    1/4  cup finely shredded Parmesan cheese

    1  Tbsp. snipped fresh tarragon or 1/2 tsp. dried tarragon, crushed

    8  oz. cooked boneless ham, cut in bite-sized slices

    1  lb. fresh asparagus spears, trimmed, cut in 2 to 3-inch pieces

    Tarragon sprigs (optional)

    Directions

    1. Preheat oven to 400 degrees F. In medium saucepan cook potatoes, covered, in small amount of lightly salted boiling water 5 to 7 minutes, just until tender. Drain; transfer to bowl and set aside.

    2. For sauce, in same saucepan combine cream cheese, milk, 2 tablespoons Parmesan, and 1/4 teaspoon black pepper. Heat and whisk until smooth and cheese is melted. Remove from heat; stir in tarragon.

    3. Layer potatoes, ham, asparagus, and sauce in 1-1/2-quart baking dish. Bake, covered, 20 minutes. Uncover; sprinkle remaining Parmesan. Bake 10 to 12 minutes. Let stand 5 minutes. Top with tarragon and freshly ground black pepper. Serves 4.


  6. Our family favorite is Pizza Soup. It so easy to add and take out ingredients. And its great for left overs.

  7. Moms Accidental Teriyaki Pork Chops

    This dish can be made more or less sweet according to taste. It is just as good without the mushrooms.

    6 to 8 pork chops (boneless) or chicken

    ¼ cup butter or margarine

    3 TBS olive oil

    1 cup slice mushrooms (optional)

    ¼ cup sweet wine (White port wine is good)

    ½ cup Kikoman Teriyaki Marinade

    ¼ cup corn syrup or sugar (optional), use only if you like your teriyaki a little sweet

    1 - (10 ½ oz) can white sauce or package white sauce made according to directions

    In large skillet brown pork chops in 2 tablespoons melted butter and 2 tablespoons olive oil. Remove chops from pan. Add remaining butter and oil to pan drippings. Add mushrooms and sauté until golden brown. Add remaining ingredients except white sauce. And simmer for 15 minutes. Add white sauce and stir until smooth and completely blended. Place pork chops in a 3-quart casserole dish and pour sauce over it. Bake at 350F for about 1 ½ hours or until chops are tender.

    Makes 6 to 8 servings.

    Serving suggestions: Goes great with mashed potatoes (use the sauce over the potatoes), pasta, or rice.
