Anybody have a really good recipe for pasta carbonara?

  1. The key for me is the ingredients...

    I've never done it with sausage, but what I do is go to Safeway and take uncooked lard. It's pretty had to find, but it's well worth it. Cut it in thin slices. Put in a pan with a hint of olive oil and cook rapid fire.

    For best results, buy fresh taggliettella, the kind that takes 3mn to cook. Boil water, cook.

    Then mix in: 1/4 pint heavy whipping cream, 2 tblsps of sour cream (creme fraiche is the best though if you can find it), your lard, 1 egg, and thyme. Mix in a low temp for 2-3 min.

    Voila!

    My mom used to make this in France, and lots of students have adopted it (pasta is the cheapest food there). For an interesting variation, you can add a hint of curry powder (but just a hint...). Enjoy!

    Make sure you use REAL italian sausage and real pancetta, if you can't find it you can substitute real bacon.  This is seriously the best carbonara recipe ever.  The sauce is to die for with the hint of lemon, and the italian sausage adds a really lovely rich flavor.

    Every time I cook this dish, it's a huge hit.
