Anyone from Peru have an amazing roast potato recipe?

I was in Peru a few years ago and we were in the Mountains around Huascaran, we ate the most amazing potatoes. I have never to this day been able to figure out what they were made with. All I remember about the look of them is that they had some sort of yellow spice on them. Anything helps!!

    Roasted Peruvian Potatoes  

    Ingredients :

    2 lb Peruvian purple potatoes scrubbed

    1/2 cup extra-virgin olive oil

    1 tbl Mexican oregano

    1 tbl minced garlic

        Salt to taste

        Freshly-ground black pepper to taste

    1 tbl cilantro

    Method :

    Preheat oven to 400 degrees.

    Halve the potatoes and place them in a bowl. Cover them with water if you cut them ahead of time.

    In another bowl, mix olive oil, oregano, garlic, salt, and pepper. Mix well. Drain potatoes well and add them to the oil mixture. Toss with olive oil mixture. Spread the potatoes on a sheet pan. Roast for 30 minutes until potatoes are tender. Sprinkle with cilantro and serve.

    This recipe yields 4 to 6 servings.

    Roasted Garlic Potatoes

    What you need:

    8 new potatoes (the red ones), cleaned and scrubbed

    4 cloves of minced garlic

    1/4 cup of olive oil

    1/2 teaspoon of dried Rosemary- optional

    Salt and pepper to taste

    What you do:

    Preheat oven to 400 degrees Fahrenheit.  Cut each potato into wedges. Each potato should yield about 6 wedges.  Place wedges, garlic, olive oil and seasonings into a pan, toss or mix the potatoes with your hands to coat evenly. Make sure the wedges lay flat in the pan- no layering.

    Place in oven without covering.  Roast for about a half hour or until the potatoes are fork tender.  Turn the mixture a couple of times during cooking.

    Ingredients

    1kg/2½lb floury potatoes, such as Maris Piper

    olive oil or goose fat

    Method

    1. Preheat the oven to 220C/425F/Gas 7.

    2. Peel the potatoes and cut into large chunks. Parboil in boiling salted water for 5 minutes. Drain and toss in the pan to roughen the edges.

    3. Put a generous amount of olive oil or goose fat in a roasting tin and put in oven, until smoking. Carefully take the tin out of the oven and add the potatoes to the hot fat, basting them as you do so.

    4. Put the tin back in the oven and cook for about 1 hour until the roast potatoes are golden and crunchy on the outside and soft in the middle. Turn them over from time to time whilst they are cooking to make sure they colour on all sides.

I believe what you had was a dish called "Papa a la Huancaina".  It's a delicious traditional peruvian dish made with potatoes and a creamy cheese based sauce with evaporated milk, peruvian peppers, and other condiments.  You may have had black olives and a cut hard boiled egg served along with it.  Wikipedia has a picture of the dish.  You can ask for it at any Peruvian restaurant.
