  1. 2 pounds of minced meat

    1 onion, chopped

    1 slice of white bread

    2 tablespoons apricot or peach jam

    2 tablespoons chutney (or mix 1 tablespoon jam with 1 tablespoon of mayonnaise)

    1 tablespoon oil

    3 eggs, beaten

    1 cup milk

    2 tablespoons of lemon juice

    2 teaspoons of curry powder or curry paste

    1 teaspoon turmeric

    2 bay leaves (or lemon leaves)

    salt to taste

    Soak the bread in half a cup of milk. Drain the milk and add the bread to the minced meat.

    Add the jam, chutney, lemon juice, curry powder, turmeric and salt. Mix well.

    Heat the oil in a large pan. Add the onion and cook till soft. Add the meat mixture and brown, stirring all the time.

    Put the mixture into a greased ovenproof dish.

    Beat the rest of the milk and the eggs. Pour the egg mixture over the meat mixture. Carefully place the bay leaves (or lemon leaves) on top of the mixture and bake in the oven at 350 degrees Fahrenheit until the eggs are set. This should take about 45 minutes.

    YELLOW RICE

    2 cups uncooked rice

    2 teaspoons cinnamon

    salt to taste

    1 tablespoon turmeric

    1 tablespoon sugar

    1 cup seedless raisins (optional)

    1 tablespoon butter (or margarine)

    water

    Add all the ingredients, except the raisins, into a large pot and boil in water for 30 to 40 minutes.

    Add the raisins and simmer for 45 - 60 minutes.

    Remove from the stove and transfer into a dish. Serve with the bobotie immediately.

    2 onions, thickly sliced

    3 tablespoons chutney

    6 almonds, chopped

    1/2 cup raisins

    4 bay leaves

    DIRECTIONS

    In a large skillet, pour in just enough water to cover the bottom. Bring to a boil and add the onion slices. Cook until the onions appear translucent. Remove the onions and finely chop them. Drain water from pan and return to the heat. Return the onions to the hot pan and brown slightly. Set aside.

    Preheat oven to 350 degrees F (175 degrees C).

    Soak the slice of bread quickly in the milk and squeeze it out. Set the drained milk aside. Crumb the bread. Place in a large mixing bowl. Mix bread together with ground beef, curry powder, 1 egg, sugar, salt, black pepper, turmeric, vinegar, chutney, almonds and raisins.

    Place the mixture in a greased 7x11 inch baking dish. Insert the bay leaves into the meat. Bake in a preheated oven for 1 hour.

    Beat the remaining egg with 3 tablespoons of the drained milk. Pour over the meat and bake for another 30 minutes.

    1 teaspoon ground cumin

    2 teaspoons salt

    2 tablespoons grated fresh lemon rind

    1/2 lemon, juice pressed out

    1 tablespoon fine apricot jam

    2 tablespoons fruity chutney

    2 tablespoons sultana or seedless raisin

    6 lemon leaves

    6 whole blanched almond

    Extra

    1/2 cup milk

    1 egg

    1/4 teaspoon turmeric

    Directions

    1Heat oven to 350 deg F/18- deg C, and grease a fairly small round oven dish.

    2Put the meat in a mixing bowl.

    3Soak the bread slice in milk, in another bowl.

    4When the bread is soft and soaked, take it out of the milk without squeezing out the milk, and crumble into the minced meat. (There will be milk left in the bowl -- keep it).

    5Add everything to the meat up to, and including, the sultanas or raisins.

    6Mix well, preferably with a large fork or with your hands. Work lightly but mix thoroughly. If the meat seem dryish, you

    7can add the rest of the milk in which the bread was soaked. (But in the end the meat will be soft and juicy).

    8Scrape the mixture into the greased bowl and smooth the top. Insert the lemon leaves and blanched almonds decoratively into the top so they are upright. Bake for 30 minutes.

    9In the meantime, beat together the egg, milk, and pinch of turmeric.

    10After the 30 mins., remove the meat dish from the oven. If the meat has shed fat, which it will, carefully pour off the fat.

    11Pour over the egg-milk mixture, then return to the oven for 10 - 15 mins or until the custard has almost disappeared into the meat and is golden.

    12** Postscript: I've just made this version, and I've decided that next time I'll increase all the extra flavours, e.g. more curry, cumin, lemon rind and chutney. I prefer these flavours to be more discernable.***.

    13Serve with rice and a fresh green vegetable. As a salad: very thinly sliced vine-ripened tomatoes with equally thin onion slices, with fresh basil and a good dressing.

    14Always best on the day after, so can be made ahead. Serve hot, but don't cook again. Cold leftovers are delicious as sandwich fillings.
