  2. hmm... this is the simplest dish that i cook whenever i'm out of idea..

    Fried Squid ( Sotong goreng tepung)

    **************************************...

    Squid (cleaned & cut into ur preference)

    Wheat flour

    Water

    a pinch of black pepper

    a pinch of salt

    a pinch of baking powder

    u just mix well all the ingredients together in a bowl & dip in the squid b4 u deep fry it.(make sure the oil is hot).

    note: sometimes frying squid can cause a bit of mess in the kitchen (oil spatter) but i can guarantee u that u will enjoy the dish later.

    If u like seafood pasta, give this a try shayna: If u dont like salmon, u can change it to Prawns or other shellfish: I made it once every 2 weeks. My husband loves it and it is so easy and quick. Toksah berpeluh..

    Fettucine Salmon Alfredo

    Serves 4

    •10 ounces fettuccini pasta

    •Salmon 1 slice cut- dice and carefully pick out the bones.

    •1/2 cup butter

    •5 cloves garlic, chopped

    •1 cup heavy cream or half n half (u can get it at the milk and yoghurt section)

    •1 egg yolk

    •2 cups freshly grated Parmesan cheese

    •2 tablespoons dried parsley

    1.Bring a large pot of lightly salted water to a boil. Add fettucine pasta and cook for 8 to 10 minutes or until al dente; drain.

    2.In a large skillet melt the butter and add the chopped garlic. Cook on low for about 5 minutes, stirring often, making sure not to burn the garlic. Add salmon.

    3.Pour about a 1/4 cup of the heavy cream into a small bowl. Add the egg yolk and beat together; put aside. Pour the remaining cream into the frying pan. Increase the heat to medium-high. As the cream starts to boil, mix rapidly using a whisk. Slowly add the cream/egg mixture. You do not want the egg to curdle. Continue whisking until well blended.

    4.Add 1 cup of the Parmesan cheese and continue to mix the cream. Pour in the remaining Parmesan and the parsley, mix until smooth. Immediately remove from stove. Serve over cooked pasta. U can add sprinkles of cheap caviar over it and some fresh basil leaves for extra eye appeal.

    My sister's local recipe which i love:

    Asam Pedas (Hot and Sour Fish)- Idah’s recipe

    Blended items:

    37 dried chili (3 tbsp blended chili)

    5 shallots or 1 onion

    7 garlic

    1 inch galanghal (lengkuas)

    1 inch fresh turmeric/powdered turmeric

    1 inch ginger

    3pcs of asam keping (tamarind)

    Other items:

    Fish (white meat) – kurau, tenggiri, kembung or anything u fancy..

    Daun kesum sprigs

    1x Bunga kantan cut into half lengthwise

    2 tbsp Halba (fenugreek)

    Carrot wedged finger size

    Tomatoes quartered

    Pickled sawi (optional-soak in water to rid sourness in advance)

    Heat oil and fry blended items til aromatic and almost dry then add a cup of water.

    Salt to taste.

    Put in the fish and add other items.

    Add 2 tbsp of tomato sauce and 2 tbsp of chili sauce.

    Add water if needed, preferably not to much, just enough to cover the fish.

    Soto Ayam:

    1 chicken - cut into half

    Boil water in the pot and lump those chicken into it. Once chicken is cooked, take it out and shred it to pieces by hand. Skin and bones to be thrown back into the pot of boiled chicken water.

    For the soto broth:

    1 finely sliced onion (bawang besar)

    3 finely sliced garlic

    1 inch of finely sliced ginger

    1 inch of finely sliced galanghal (lengkuas)

    1x sup bunjut adabi or (1 inch of cinnamon -kayu manis, 1 star anise - bunga lawang, 3 cardammon - biji pelaga) or 1 small packet of adabi rempah sup.

    dash of white pepper

    1x Chicken cube knorr.

    Take a pot and heat 1/4 cup of cooking oil, chuck in the onion, garlic, ginger and galanghal. Stir til aromatic and dont burn it.

    Once aromatic, add a cup of water from the remaining of boiled chicken water earlier, add chicken stock cube and sup bunjut or all the spices except for white pepper.

    Add the chicken skin and bones into it, add more water from the remainings as much as u like but dont make it too diluted. Add some salt and give it a taste. Once your desired taste, add the pepper. U can turn off the fire once the broth is boiled.

    While doing this, u can also boil nasi impit of ketupat nona. Only need to boil it in water thats all. Once boiled, diced it.

    For the sambal kicap:

    1 handful of cilipadi

    3x garlic

    bash it with pestle and mortar (lesung batu) til fine

    add some sugar perhaps 1 tbsp (up to your taste bud) and bash some more. scoop it up and place it in a bowl.

    Get your soy sauce (kicap) tamin or kipas udang and pour some in the bowl. If it's too salty, add bit more sugar. The amount of kicap is up to you of how dilute u want the sambal to be.

    Other condiments:

    fresh taugeh for extra crunchy.

    chopped spring onions and parsley. (daun sup)

    Bawang goreng (optional). -bawang goreng is made of shallot, not onion.

    Get a large bowl, put some nasi impit, taugeh, chicken and the broth. add some sambal and sprinkle some spring onion over.

    Have fun.

  7. its traditional Moroccan dish and you gonna love it....buy nice peace of lean beef, carrots , couple of red or yellow potatoes,squash,a can of chick peas,bag of raisins,...or any vegetable u prefer..cook beef separately about 35-40 minutes...and in other dish vegetable,it all depends what kind of vegetable u choose about the same time cooking as beef...when its done mix meet and vegetable together, except raisins and chick peas ,you are just gonna boil that for a couple of minutes. and put on the top...buy also tiny pasta its called cous-couse...boil that in the water for couple of minutes, and serve seperetly ...very simple, and delicious...you gonna love it

    try getting local cook book, the are many in book store. its not that hard to learn. or you can search the web as suggested by our friends.
