  1. SALT FISH  FRITTERS {STAMP & GO}

    1/4 pound salt codfish 6 tablespoons boiling water 1/2 cup all purpose flour

    1 onion, finely chopped 1 garlic clove, finely chopped

    1 tablespoon seeded, chopped Scotch Bonnet or jalapeno chilli

    1 tablespoon finely chopped chives

    Salt and freshly ground black pepper to taste

    1/2 teaspoon finely chopped fresh thyme 2 eggs separated,

    Vegetable oil for deep‑frying

    1teaspoon tarragon flavoured vinegar

    Soak salt codfish in water several hours, or preferably overnight.

    Drain; pour the boiling water over fish and cool. Drain off water and slowly combine it with flour in a bowl, stirring until mixture is smooth.

    Rinse fish in fresh cold water, remove any skin and bones, then shred very finely. Add fish, onion, garlic,

    chilli, chives, salt, black pepper, thyme and egg yolks to flour mixture.

    Stir until combined.

    Heat oil in a deep skillet to 375F (1 90C or until a 1 inch bread cube turns golden brown in 50 seconds.

    Beat egg whites until stiff but not dry; fold into fish mixture along with vinegar.

    Drop this batter by tablespoons into hot oil; fry until golden brown.

    Drain on paper towels and serve hot. Makes 6 servings.

    Saltfish Fritters

    Serves: 6

    INGREDIENTS:

    ¼ lb. Salted Codfish

    ¼ lb. flour

    1 medium sized onion

    2 medium sized tomatoes

    1 small clove garlic

    ½ teaspoon paprika

    2 stalks scallion

    ¼ teaspoon hot pepper

    METHOD:

    1. Soak codfish in water overnight to remove excess salt

    2. Dice, shred finely, and set aside

    3. Chop and combine onions, garlic, scallion, hot pepper and tomatoes

    4. In a skillet using a small amount of oil, fry the chopped seasoning

    5. Place the codfish in a mixing bowl and add flour and cold water to make a thin batter

    6. Add the fried seasoning and the paprika

    7. Spoon the batter in the an oil heated skillet

    8. Fry until golden brown and crisp on both sides

    9. Drain on paper towels and keep in a dish in a warm oven until ready to serve

  2. Jamaican Saltfish Dumplings

    Ingredients

    1/2 lb boneless salt cod

    3 tablespoons oil

    2 onions, sliced

    1/4 teaspoon dried thyme

    1/4 scotch bonnet pepper skin finely chopped up

    1 small tomato, chopped

    3/4 teaspoon tomato paste

    1/2 sweet pepper chopped

    1/8 teaspoon black pepper

    Soak the salt cod in a pot of water overnight to remove most of the salt. If the cod is still very salty, boil in water for 20 minutes. Drain cod and cut or break into small pieces.

    Heat oil in a frying pan. Add the onions, thyme and scotch bonnet pepper, tomato, tomato paste and green peppers. Stir for a few minutes. Add the cod. Stir. Simmer for 5-8 minutes, and then sprinkle with black pepper.

    Best served with bammy, roast breadfruit, fried or cooked dumplings, or fried or cooked plantains, cooked yams and Jamaican sweet potatoes.

  3. Thanks for asking this question and looks like Mistress of Spices has given a delicious recipe.  I'm going to try it.  But I don't know what Scotch Bonnet Pepper Skin is.
