Anyone have Chipotle's Pico De Gallo Recipe Or Similar Recipe?? Please help!!?

I am going to be making my own version of Chipotle's Chicken Fajita Burrito tonight for dinner. I have the recipes for everything except the Pico De Gallo. It is probably real simple but I've never made it before. I like how theirs is chunky but also has a bite to it. I have no clue what kind of tomatoes or use or anything. I actually get kind of confused with all the different types of tomatoes in the produce section. Does someone have the recipe for Chipotle's Pico De Gallo or a recipe for something similar? Thank you!!

  1. Just remember the 3 colors of the Mexican flag

    Red, Green and White in equal parts

    White is Onion

    Green is Jalepeno

    Red is Tomato

    Hand cut is best but some prefer to process

    Add Cilantro, Cayenne, Curry, Sesame oil, Fresh corn or whatever your little heart desires


  2. Pico De Gallo is simple.  You use tomatoes, onions, peppers and cilantro.  You can use as much or as little of these ingredients as you like.  Here are appx measurement of what I use...

    6 medium Tomatoes diced

    1 medium Onion diced

    2 - 3 tbls. fresh Cilantro chopped.

    2 to 4 Fresh serrano or jalapeño seeded and minced

    garlic powder/salt to taste (very little)

  3. I make this salsa several times a week, because everyone just eats it up so fast!

    FRESH GARDEN SALSA

    1 bunch cilantro, washed

    1 white onion, quartered

    2-3 large vine-ripe tomatoes (or 3-4 Roma), quartered

    2 green bell peppers, quartered

    1-4 jalapeno, serrano, poblano or Anaheim chilis (depending on how hot you want it to be) - seeded

    2 TB minced garlic

    1 TB olive oil

    1 TB white vinegar

    salt & pepper to taste

    Pulse the cilantro in food processor until minced.  Pulse the veggies in food processor until chunky.  Combine all ingredients together and chill.  Best if it sits for an hour or so.....

  4. The best tomato to use for pico de gallo is the Roma (it has more meat and texture), also all of the recipes so far are OK, but the special ingredient they are all missing is the juice of a lime or lemon, makes the salsa taste very fresh.

  5. A good tomato to use in pico de gallo is a nice hot house tomato, something that is sweet and juicy. As far as other ingredients, red onions are great because they add flavor as well as color. Green and/or red bell pepper can be used. To give pico that extra zest, a bit of lemon juice works wonders. If you like spice a small amount of hot pepper olive oil or diced jalapeno (or similar hot pepper) will give it that extra kick.  Make sure all vegetables are diced and cilantro is finely shredded. Toss all ingredients together and -voila!

    jalapino or serano peppers (cut out the seeds and veins unless you want it really hot

    celantro

    salt

    pepper

  7. 2 red tomatoe such as a Roma or whatever. A couple jalapenos depending on how hot you want it, a few sprigs of cilantro, about a 1/2 an onion cut up perferably a Vadahlia onion or (purplish onion). Cut all them ingrediants up and them cut up a lime and squirt all the juiceon it Put some salt, and garlic on and mmmmm enjoy..
