  1. Rhubarb Strawberry Crunch --

    INGREDIENTS

    1 cup white sugar

    3 tablespoons all-purpose flour

    3 cups sliced fresh strawberries

    3 cups diced rhubarb

    1 1/2 cups all-purpose flour

    1 cup packed brown sugar

    1 cup butter

    1 cup rolled oats

    DIRECTIONS

    Preheat oven to 375 degrees F (190 degrees C).

    In a large bowl, mix white sugar, 3 tablespoons flour, strawberries, and rhubarb. Place the mixture in a 9x13 inch baking dish.

    Mix 1 1/2 cups flour, brown sugar, butter, and oats until crumbly. You may want to use a pastry blender for this. Crumble on top of the rhubarb and strawberry mixture.

    Bake 45 minutes in the preheated oven, or until crisp and lightly browned.

    Strawberry Rhubarb Cream Pie --

    INGREDIENTS

    1 1/2 cups white sugar

    1/4 cup all-purpose flour

    3/4 teaspoon ground nutmeg

    3 eggs, beaten

    4 cups chopped rhubarb

    3 cups halved fresh strawberries

    1 recipe pastry for a 9 inch double crust pie

    1 egg white

    DIRECTIONS

    Preheat oven to 400 degrees F (200 degrees C).

    In a large bowl, mix together sugar, flour, and nutmeg. Stir in eggs. Fold in rhubarb making sure to coat well, then do the same with the strawberries. Pour mixture into pie crust. Place second crust on top being sure to cut slits into it to vent steam. Brush egg white on top crust.

    Bake for 50 to 60 minutes in the preheated oven, until rhubarb is tender, and crust is golden.

    Low Sugar Strawberry Rhubarb Crunch --

    INGREDIENTS

    4 cups chopped fresh rhubarb

    1 pint strawberries, hulled and sliced

    1 tablespoon honey

      

    1 cup rolled oats

    1/2 cup packed brown sugar

    1/4 cup butter

    1 teaspoon ground cinnamon

    DIRECTIONS

    Preheat the oven to 350 degrees F (175 degrees C).

    In a medium bowl, stir together the rhubarb, strawberries and honey. Transfer to a shallow baking dish. In the same bowl, stir together the oats, brown sugar and cinnamon. Mix in the butter until crumbly, and spread over the top of the fruit.

    Bake for 40 minutes in the preheated oven, until rhubarb is tender and the topping is toasted. Serve warm.

    In a medium bowl, stir together the rhubarb, strawberries and honey. Transfer to a shallow baking dish. In the same bowl, stir together the oats, brown sugar and cinnamon. Mix in the butter until crumbly, and spread over the top of the fruit.

    Bake for 40 minutes in the preheated oven, until rhubarb is tender and the topping is toasted. Serve warm.

    Topping

    1 cup Zoe’s Granola Cereal (any flavor)

    1/4 cup flour

    1/2 cup rolled oats

    2 Tbs. brown sugar

    1/4 tsp. salt

    5 Tbs. melted butter

    Filling

    1 1/2 lbs rhubarb, cut into 1-inch chunks

    3 1/2 cups sliced strawberries

    1 cup white sugar

      

    Instructions:

    1. Preheat oven to 375°F

    2. Combine the rhubarb, strawberries and sugar and pour into an 8” square dish.

    3. Combine the topping ingredients and press over the fruit filling.

    4. Bake 40 or more minutes until the rhubarb is soft and the juice is bubbling. If the topping starts to get too brown, then cover the top lightly with foil.

    Combine remaining flour, brown sugar, oats, nuts and melted butter. Sprinkle over rhubarb-strawberry mixture. Bake at 375 degrees for 35-45 minutes until topping is crisp and brown. Top with pareve whip or ice cream.
