Anyone have a recipe for Thai Basil sauce?

  1.       1 cup water

         1 cup rice vinegar

        1 cup sugar

        2 teaspoons fresh ginger root, minced

        1 teaspoon garlic, minced

        2 teaspoons hot chile pepper, minced

         2 teaspoons ketchup

         2 teaspoons cornstarch

        1/4 cup purreed basil

        Pour water and vinegar into a saucepan, and bring to a boil over high heat. Stir in sugar, ginger, garlic, chile pepper, basil and ketchup; simmer for 5 minutes. Stir in cornstarch. Remove saucepan from stove to cool. Then transfer to a bowl, cover, and refrigerate until needed.


  2. Thai Basil Sauce (or can be used as a marinade)

    1/2 cup rice vinegar

    1/4 cup honey

    4 cloves garlic, minced

    1 fresh red chili (de-seeded for less heat), minced or finely sliced

    1 Tbsp. fish sauce

    1 Tbsp. soy sauce

    1 tsp. dark soy sauce

    1 Tbsp. (or more, if you like the taste) finely chopped lemongrass

    3-4 sprigs fresh Thai basil, stems removed and coarsely chopped

    Place all the ingredients except for the basil together in a saucepan over medium-high heat. Stir as you bring the sauce to a boil. Reduce the heat to medium, add basil, and allow to simmer for 10 minutes, uncovered. The sauce will gradually thicken. When sauce has thickened, place in the refrigerator or freezer to cool for 5 minutes.
