  1. Well, I don't have any Mexican, Latin American, or Fillippino recipes for pigs feet, but I do have a Laotian one that my mom makes...

Boil them in water until they're fully cooked, take them out of the broth, mix with salt, black pepper, crushed dried red peppers, chopped green onions, chopped celantro, and a little lemon juice... then eat!

  2. Are you sure it wasn't "pig's feet adobo"? That would make sense that it's Filipino.

For adobo here's a recipe for about two to three pounds of meat (i.e. pigs feet):

    the meat

    1/2 cup soy sauce

    1 cup distilled white vinegar

    4 cloves garlic, diced

    2 bay leaves

    1 tablespoon black peppercorns

    1. Thow everything into a pot. Bring to a boil, medium high heat. Once it boils, reduce heat to a simmer. Cover the pot and simmer for half an hour, stirring occasionally. After that, remove uncover reduce the liquid by half.

    2. Remove the meat to a serving plate. Serve it hot over steamed rice and add remaining sauce to taste.

It's not exactly spicy but it's got a good, strong flavor and it's a pretty easy dish. Enjoy!
