  1. CHIMNEY CRABMEAT APPETIZER

    The Pink Snowman

    1 cup Orange Juice

    1 10oz. pkg. Frozen Strawberries

    partially thawed

    1/2 cup of Water

2 large scoops of Vanilla Ice Cream

    Garnish: Strawberries or Orange Slices

Combine the juice, berries, and water in a blender.

Blend at medium speed for 30 seconds. Pour into

tall glasses or goblets and add a scoop of ice cream

to each. Garnish with fruit, add straw and serve

    immediately. Makes two large glasses.

1 8 oz. pkg. Cream Cheese 1/2 tsp. cream-style horseradish

    1 1/2 cups (7 1/2 oz. can) 1/4 tsp. salt

flaked, drained, crabmeat Dash of pepper

2 Tbs. finely chopped onion 1/3 cup sliced almonds,

    2 Tbs. milk toasted

Combine softened cream cheese, crabmeat, onion, milk, horseradish and

seasonings, mixing until well blended. Spoon into a 9 inch pie plate or

oven-proof dish; sprinkle with nuts. Bake at 375F. for 15 minutes. Serve

as a dip or a spread with unsalted crackers, or raw vegetables. Makes

    about 2 cups.

  2. Get a bottle of mojito mix at the store and there will be a recipe on there.

  3. This may require a bit more prep than you want to do, but here are some instructions.

You need to start with simple syrup which is 1:1 water to sugar.  So if you are just looking to make some for a few personal mojitos, mix one cup of hot water (boiling preferably but REALLY hot should do the trick) with one cup of water.  Mix with a whisk until fully blended.

    Okay, now to the drink.

Pour about two ounces of this simple syrup into a glass and add six to eight mint leaves.  Squeeze one half of a lime into the glass also (squeezing by hand is adequate) and muddle the mixture together.  A muddler is typically made of wood, about eight inches long and one inch thing.  If you don't have one, try a wooden spoon but expect to press harder.

Make sure you don't "overmuddle" your leaves.  Five or six times should do it.  You want to release the mint flavor, not grind into pulp.

Add ice and club soda (about 8 to 10 oz.) and shake.  If it isn't sweet enough, try using a little bit of Sprite in place of part of the club soda.  If it's too sweet, add more club soda until you get the desired flavor.

This is the exact recipe I used for bartending at an upscale steakhouse (minus the rum) so hopefully this will have the flavor you're seeking.

  4. A virgin mojito is just a lime soda... with a bit of mint.

Muddle 10 mint leaves and 1/2 a lime wedged in the bottom of a glass with a TSP of sugar. Add ice to the glass... Add club soda... stir... drink.
