  3. One of my favorite summer time deserts is so simple and so delicious.

All you need is 2 boxes of instant vanilla pudding and two things of cool whip. (you can use the sugar free pudding and the low fat cool whip and still taste amazing) any kinds of berries you like. I use seedless grapes, blueberries and manderine oranges in the can. wash and drain all you fruit. Make pudding as you normally would following  the box directions and make sure your cool whip is thawed. All you do is mix the already made pudding with the cool whip and add the fruit.I like to let it sit in the fridge for a few hours before serving. This is so yummy and I get asked all the time to make it. Hope you enjoy

  4. funfetti with vanilla frosting

together and pour into a greased 9" x 9" baking dish.

  7. The box cake mixes are pretty good anymore, especially if you buy one that indicates "moist" in the title or has pudding in it.  Or if you have local fresh fruit, you might consider a cobbler or a crisp.  You didn't say how many people which can affect what you'd want to make.  You might even consider individual Baked Alaskas which are cake (or brownies), ice cream and meringue if you and your friend are pretty good in the kitchen.  You can prep them in advance but have to have freezer room for them and then pop them into the hot oven at dessert time to brown the meringue while clearing the table and they enjoy some coffee!

I'm sure your parents will be thrilled with whatever you decide to make.

I'll offer specific recipes once I know how many people and what type of dessert recipe strikes you.

  9. Jello cheesecake mix is pretty good for a boxed mix. You can embellish it with fruits (sliced kiwis for example, or canned cherry pie filling, canned blueberry pie filling) or drizzle some caramel or chocolate sundae sauce and toasted nuts on it if you want something a little fancy.

  11. tiramisu

    EGG YOLKS, 6

    SUGAR, 3 tbs

    MASCARPONE CHEESE, 1 lb.

    STRONG ESPRESSO, 1-1/2 cups cooled

    DARK RUM, 2 tsp

    LADYFINGERS, 24 (packaged)

BITTERSWEET CHOCOLATE SHAVINGS, 1/2 cup for garnish

    Directions

In a large bowl, using an electric mixer with whisk attachment, beat egg yolks and sugar until thick and pale, about 5 minutes.

Add mascarpone cheese and beat until smooth.

Add 1 tablespoon of espresso and mix until thoroughly combined.

In a small shallow dish, add remaining espresso and rum.

Dip each ladyfinger into espresso for only 5 seconds. Letting the ladyfingers soak too long will cause them to fall apart.

Place the soaked ladyfinger on the bottom of a 13 by 9 inch baking dish, breaking them in half if necessary in order to fit the bottom.

Spread 1/2 of the mascarpone mixture evenly over the ladyfingers.

Arrange another layer of soaked ladyfingers and top with remaining mascarpone mixture.

Cover Tiramisu with plastic wrap and refrigerate for at least 2 hours, up to 8 hours.

Before serving, sprinkle with chocolate shavings.
