Anyone have good raw food diet recipes?

My mom has had Hepatitis C for 40 years or so now. It is now advanced a bit and after some research we know a "raw diet" is good for her. My book says to avoid all animal products except raw goat milk and goat cheese. She's a 1st grade teacher and wants to have some good snacks that she could even share w/ the kids. Anyone have any good sites or recipes for snacks and meals to make raw food exciting? All I can think of is salad! Thanks guys!! (I plan on giving best answer!! 10 pts! wooo hooo!)

  1. You can make quite a lot of raw "snack foods" if you buy a food dehydrator.  Fruit chips, potato chips, bean nibblers, live bread/crackers, etc.

    Soak raw almonds for a couple hours then drain and eat.  Soaking them releases an enzyme that's good for you.  

    In place of pasta you can get a spiral slicer and make "spaghetti" strands out of zucchini or yellow squash then serve with a raw sauce or cold-pressed oil and garlic.

    Raw recipes are sometimes hard to follow because they use so many new ingredients that I have never heard of but there are some fairly easy recipes out there.  


  2. Take different types of fruits and vegetables and cut into small pieces and make salad

    Another option is take yellow lentils whole and sock in water for a night and then cover in a wet cloth, until it gets sprouts.

  3. Two kid friendly recipes which do not require special equipment- (although they'll do best if taken to school in an ice chest.)

    Cherry Almond Cookies

    Makes 2 dozen

        * 1 ½ cups almonds

        * ½ cup walnuts

        * 1 ½ cups pitted, packed dates

        * ½ tsp almond extract

        * ½ cup dried cherries

       1. Grind ½ cup almonds into a powder in a food processor; set aside.

       2. Place the remaining 1 cup almonds and walnuts in the food processor and process until coarsely chopped. Add the dates and almond extract and process until the mixture sticks together.

       3. Remove the mixture to a mixing bowl. Add the dried cherries and mix.

       4. Form the dough into 2-inch round balls and flatten each ball slightly with the palm of your hand.

       5. Roll each cookie in the almond powder that you set aside.

       6. Store refrigerated or frozen in a sealed container. Cherry Almond Cookies keep for 1 month refrigerated and 3 months frozen.

    Double Chocolate Cake

    Makes 1 8-inch cake, 8 servings

        * 4 cups walnuts

        * 1 cup pitted, packed dates

        * 2/3 cup cocoa or carob powder

        * 2 tsp vanilla extract

        * 1 ½ Tbsp water

        * 2/3 cup dried cherries, chocolate chips, or carob chips

    Directions

       1. Place the walnuts in a food process and process until ground.

       2. Add the dates and process until the mixture begins to stick together.

       3. Add the cocoa or carob powder and vanilla extract and process.

       4. Add the water and process briefly.

       5. Add the dried cherries, chocolate chips, or carob chips and pulse just to mix.

       6. Press the mixture firmly into an 8" round cake pan.

       7. Chill for at least 30 minutes before serving. Chocolate Cake keeps for up to two weeks in the refrigerator.

    If your mom has a dehydrator she can make crackers, chips, cookies, breads... the possibilities are endless!

    However, you'll have a hard time finding any recipes which incorporate raw dairy products.  The vast majority of raw foodists are vegan.
