i am a vegetarian, but i can never find things to eat. does anyone have some good vegetarian recipies?

Unchicken cacciatore.  Make the same recipe that you see in the cookbooks--celery, peppers, onions, tomato sauce, mushrooms, etc. but use soy chicken strips instead of chicken.  Very easy, tastes the same, travels well, reheats well, and not expensive.  I put sliced frozen okra in mine to make it New Orleans style, but not everyone loves okra.

    We make BLTs with soy bacon, leftover grilled veggies, and whatever cheese you want to use.  If you want you can cut these in strips and then dip them in balsamic V after you grill the sammie in a red pepper olive oil or garlic OO.  

    Take the same soy bacon and use that to make Tuscan Asparagus--grilled asparagus, crumble the bacon, fresh parmesan shavings on top while it's still really hot. Serve w/hot garlic bread and dip in balsamic, or with a grilled portobello shroom, or with pasta.  

    Why did you *ask* this?  You're making me hungry!!

    I only make easy stuff--no kitchen attention span--so you can make all this really quickly.  Good luck :-)

  4. My favorites so far...

    Vegan Breaded, Fried, Softly Spiced Tofu

    1 (16 ounce) package extra-firm tofu, drained and pressed

    1 1/2 cups vegetable broth or stir fry mix

    3 tablespoons vegetable oil

    1/2 cup all-purpose flour

    1 tbsp vegan marinade powder mix

    1 teaspoon salt

    1/2 teaspoon freshly ground black pepper

    Cut pressed tofu into 1/2-inch thick slices; then cut again into 1/2-inch wide sticks.

    Place tofu in a pan, and pour broth or stir fry mix that was dissolved in 1 ½ cup water over the top. Simmer for 10 minutes.

    In a separate bowl, stir together flour, salt, pepper and marinade powder mix.

    Warm oil in a large skillet over medium-high heat.

    Let tofu get warm until you can tolerate the heat when you touch it, and squeeze most (but not all) of the liquid from them or just tissue the liquid from it.

    Roll sticks in breading. (You may have to roll sticks twice to end up with a fairly dry outer layer of breading.)

    Place tofu in hot oil; fry until crisp and browned on all sides. Add more oil if necessary.

    Vegan Sloppy Joes

    • 1/4 tablespoon oil

    • 1/4 cup coarsely chopped onion

    • 1/2 medium green bell pepper, coarsely chopped

    • 3/8 cup water

    • 4 ounces can tomato sauce

    • 1/4 tbsp chili powder (more to taste)

    • ¼ tbsp other available spices (depends on your taste)

    • ¼ tbsp black pepper

    • 1/2 tablespoon organic sugar

    • ¼ tsp crushed garlic

    • 3/8 cup dry textured vegetable protein (TVP) beef type

    Heat the oil and sauté the onions, pepper and garlic for 5 minutes. Add the remaining ingredients and simmer for 20 minutes. Serve over vegan rolls and breads.

    Vegan Crème Au Café (Vegan Coffee Blanc-Mange)

    ½ cup soymilk

    ¼ cup strong coffee cold

    1 2/3 tbsp cornstarch

    1 2/3 tbsp coldwater

    1 2/3 tbsp organic sugar

    1/3 tsp vanilla extract

    1/3 pinch salt

    1. In a pot over medium-low heat, put the soymilk, the coffee, the sugar and the pinch of salt.

    2. In a small bowl, whisk the cornstarch with the cold water. Add to the pot.

    3. Cook, stirring constantly for 15 to 20 minutes.

    4. Add the vanilla.

    5. Lightly oil a mold in a fancy shape.

    6. Put the mixture in the mold. Let cool then refrigerate for at least 2 hours.

  5. What I made for dinner tonight: Black beans and rice stuff :)

    In a saucepot:

    Cook approximately 1/4 of an onion, chopped finely, in 1 TBSP oil

    Add one can Black Beans (about 15 oz)

    Add ONE 15 oz can of your choice of:

    **diced tomatoes with green chiles (what I used)

    **stewed tomatoes

    **something similar to one of those

    Stir all together

    Bring to a boil

    Stir in 1 cup dry instant rice (I used one bag of the boil in bag instant rice)

    Bring to boil again.

    Simmer covered for 5-10 minutes. (You will be able to tell it is done when the rice is done...I normally simmer 10 minutes)

    YUMMMY!!! I put mine in pita pockets, but is good by itself, and also with tortillas. Maybe even garlic bread if you use Italian canned tomatoes and add about 1 tsp oregano and 1 tsp garlic (I have done this as well....a little more bland than using tomatoes with green chiles, but still good)

    Enjoy.  Makes about 4 big servings, probably 6 servings really.

Also to Health Food stores  many sell vegetarian recipe books there!  Also subscribe to Vegetarian Times and you'll get plenty of veggie recipes..   Tonight I'm making myself vegetarian  & ginger nuggets and fake meat balls!  Also having  Tomato Aspic  made from non-animal gelatin!
