  1. what kind of a dinner are we talking about?

    last night i made my girlfriend(meat-eater) and i(vegan) dinner.

    we had rice-a-roni.

    you could go with the easy choice of pasta though

    Caribbean Vegetable Stew

    2 cups chopped onions

    water for browning, if needed

    3 cups chopped cabbage

    1 fresh chile, minced (seeded for a milder "hot"), or 1/4 teaspoon cayenne

    1 tablespoon grated fresh ginger root

    2 cups water

    3 cups diced sweet potatoes, cut into 1/2inch cubes (about 1 medium sweet

    potato)

    Salt to taste

    2 cups undrained chopped fresh or canned tomatoes

    2 cups fresh or frozen sliced okra

    3 tablespoons fresh lime juice

    2 tablespoons chopped fresh cilantro

    Chopped peanuts

    Sprigs of cilantro (optional)

    In a nonstick soup pot, brown the onions on medium heat for 4 or 5 minutes (use a little water, if necessary to prevent sticking). Add the cabbage and the chile or cayenne and continue to sauté, stirring often, until the onions are translucent, about 8 minutes.  Add the grated ginger and the water, cover the pot, and bring to a boil. Stir in the sweet potatoes, sprinkle with salt, and simmer for 5 or 6 minutes, until the potatoes are barely tender. Add the tomatoes, okra, and lime juice. Simmer until all of the vegetables are tender, about 15 minutes. Stir in the cilantro and add more salt to taste.

    Sprinkle the stew with chopped peanuts. Top with a few sprigs of cilantro, if you like.

    Serve the stew on rice or with a fresh crusty bread.

  4. I am not affiliated with PETA at all. But I stumbled across their 2 week sample menu several months back. They really have some great recipes. My family have all raved when I make recipes from the menu, especially my kids. They love the sloppy joes from here. Try it out. You wont be disappointed. I just hit print out the whole menu and you can have a .pdf document instead of going to the page each time to look for the recipes.

  5. Leave out the Parmesan cheese and you've got vegan.

    Pasta Primavera

    3 carrots, peeled and cut into thin strips

    2 medium zucchini or 1 large zucchini, cut into thin strips

    2 yellow squash, cut into thin strips

    1 onion, thinly sliced

    1 yellow bell pepper, cut into thin strips

    1 red bell pepper, cut into thin strips

    1/4 cup olive oil

    Kosher salt and freshly ground black pepper

    1 tablespoon dried Italian seasoning

    1 pound farfalle (bowtie pasta)

    2 Tablespoons minced garlic

    15 cherry tomatoes, halved

    1/2 cup grated Parmesan

    Preheat the oven to 450 degrees F.

    In a very large bowl toss all of the vegetables with the oil, salt, pepper, and dried herbs to coat. Transfer the vegetable mixture to 2 heavy large baking sheets and arrange evenly. Bake until the carrots are tender and the vegetables begin to brown, stirring after the first 10 minutes, about 20 minutes total.

    Meanwhile, cook the pasta in a large pot of boiling salted water until al dente, tender but still firm to the bite, about 8 minutes, or to package directions. Drain, reserving 1 cup of the cooking liquid.

    Toss the pasta with the vegetable mixtures in a large bowl to combine. Toss with the cherry tomatoes and enough reserved cooking liquid to moisten. Season the pasta with salt and pepper, to taste. Sprinkle with the Parmesan and serve immediately.

  6. The other day I got some super yummy asparagus from the farmer's market, chopped it small, put it in a cast iron with some EVOO, added brown lentils (canned) and leftover (already cooked) red potatoes.  Finished it with fresh crushed garlic for the last 2-3 min. and voile... easy and really tasty meal... you could serve it with brown rice or couscous, maybe even some vermicelli or something like that?

    OR last week I did up some bok choy, chopped finely, in the good old cast iron, added black beans (canned, again) and some (already cooked/baked) sweet potatoe then finished it with Hoisin sauce.  I am not vegan, so I am not sure if Hoisin is vegan or not, sorry.  This turned out sooooo good and would be great with rice noodles or bean thread noodles as well.
