    in the Australian Gold Rush, the Chinese ate what they could buy, at exorbitant prices, or fish or trap.They didn't like mutton, the standby of graziers!

    So many Chinese miners in Australia married European women that their diet quickly assimilated into something like the Anglo miners'.

    There is a flourishing Chinese restaurant industry in Australia now, but most of the proprietors and cooks have arrived in the last 50 years rather than being the descendants of miners.

The food was about the same for everybody.  It was only after the Chinese immigrants started their own small farms that the were able to grow the kinds of vegetables that they had eaten in China.  Rice, which was a staple of the Chinese diet, was also grown and eaten in the United States at that time and would have been shipped to California.

  3. In Canada during the Gold Rush the Chinese ate rice and noodles and vegetables and anything they could import from China. Places like Victoria BC

    during the gold rush had the largest Chinese population in North America as the Chinese had flooded there after the railroad building had ended. It still has a very large Chinese population and they helped

    build the city which is the capitol of B.C. Vancouver BC also has a big Chinese population
