  1. 2 oz. Cheddar Cheese

    1 C Dry White Wine

1/3 C pickeled Garlic pepper sauce

    1/4 C Heavy Cream

    1 T Butter

    2 T Flour

    Salt & Pepper to taste

In a 1 qt. pot, melt the butter over medium heat. Whisk in the flour and continue whisking for three minutes. Do not let the mixture get brown. Pour in the wine and stir until smooth. Bring mixture to a boil; simmer for 2-3 minutes, stirring frequently. Add the heavy cream and pickled garlic pepper sauce; simmer another two minutes. Add cheese and stir until melted. Pour over the vegetable of your choice.

    OR

    TUNA SALAD

1-6 oz can water packed tuna (I prefer albacore), drained

    1/4 C. Mayonnaise

    1/4 C pickled garlic

    3 T. Onion, chopped

3 T. Celery, chopped (one stalk)

    2 T. sliced Almonds

Mix all ingredients except sliced almonds. Set in refrigerator for about an hour. Remove and add the sliced almonds on top. I like to top some nice crisp iceburg lettuce with this mixture; it makes for a nice low cal meal and very satisfying. Sometimes a couple of your favorite crackers is a nice addition on the side.

    OR

    Cold Pasta Salad

    1/4 C. Soy Sauce

    1/2 C. Bean Sprouts

    1/2 C. thinly sliced Carrots

1/2 C. Cucumber; peeled, seeded, and thinly sliced

1 C. toasted Cashews, lightly crushed

    3 T. chopped fresh Cilantro

    2 T. toasted Sesame Seeds

In a small bowl, whisk together honey, soy sauce and sesame oil. To the nooldes, add the scallions, bean sprouts, carrots, pickeld garlic, cucumber, cashews, cilantro, sesame seeds, and the soy mixture. Mix thoroughly.

  2. Slice and serve over pasta salad or add to a fresh green salad.

  3. That's a rather odd website, don't you think? And isn't there a passage in the Georgics about pickled garlic?
