  2. PEPPERONI PINWHEELS  

    3-4 fajita sized flour tortillas

    10 slices pepperoni

    2 t. Kraft Shredded Parmesan, Romano, and Asiago (in dairy section)

    4 oz softened cream cheese

    1/8 t. dried minced onions

    1/16 t. garlic salt

    dash or 2 of pepper

    ¼ t. freeze-dried or fresh chives

    dash chili powder

    ¼ t. parsley flakes

    smidgen dill weed

    smidgen oregano

    dash hidden valley ranch seasoning

    Dice up pepperoni. Mix all ingredients except flour tortillas in a small bowl. Stir together well. Spread onto flour shells. Roll up then put in refrigerator or freezer until cream cheese is firm. Slice up into desired pieces. Enjoy!

    Ingredients:

    Yummy Dipping Cups:

    2 cups lemon flavored non fat yogurt

    1/2 cup seedless raspberry jam

    1 tsp ground nutmeg

    6 paper cups

    Granulated sugar

    Fruit & Cake Kabobs:

    2 cups pound cake cut into 1 inch squares

    Assorted fruits such as peach slices, apples, grapes, strawberries, pineapple chunks and bananas suitable for placing on a skewer

    Method

    In a medium size bowl thoroughly mix together yogurt, jam and nutmeg. Use a sharp serrated knife to cut each paper cup about 2 1/2 to 3 inches up from bottom of cup. Discard cut off tops. The cups will serve as individual dipping bowls for Yummy Dip. Dip prepared paper cup rims lightly in yogurt then press each rim into granulated sugar, decorating each rim. Evenly divide Yummy Dip between each sugar rimmed cup. String wooden skewers randomly, with assorted fruits and cubes of cake. It's designed more for a kids party but you could easily alter it for adults.

  3. If you buy Norwegian potato lefse from the grocery store (I get mine at HyVee), they are like tortillas, but already rectangular...so it's pretty easy to fill and roll them.

    Here are my two other favorite roll-ups:

    Take rectangular slices of deli ham and dry with paper towels.  Spread cream cheese on the rectangle.  Place spear of canned asparagus at the base and roll longways.  Then slice the roll into bite-sized pieces.  It's retro and fabulous.

    Next...Mix 2/3 part cream cheese with 1/3 part grated cheddar.  Add in some canned jalapeno pieces and some chopped black olives.  Spread the mixture on Pilsbury Crescent Roll Dough (Separate the dough into rectangles first -- that's two triangles per rectangle -- make sure to press the seam together so stuff doesn't leak out).  Then roll up the rectangle and cut the log into 3/4 inch slices.  Place on a baking sheet and follow the instructions on the dough for temperature and time.

    As far as display...any rolls look fany and colorful enough without much display.  You could put some fresh sprigs of mint or cilantro on the plate if you wanted.

Fruit kebobs stuck into whole fresh pineapples (works as a nice centerpiece too)  ......  SPINACH DIP (use the recipe on the Knorr vegetable soup mix, but put the dip into a hollowed out sourdough bread; replace top of bread; wrap in foil and refrigerate overnight)  ......  TORTILLA WRAPS:  get the largest flour tortillas you can find (they also come in colors); spread with softened cream cheese, a thin slice of ham & cheese; roll up tightly; wrap in saran or foil & refrigerate;  slice into 1" pieces and stand the pieces up on a platter .....** .... Tiers and levels are the best way to display food on a buffet table.  Pile some books and cover with a cloth.  Put a few of the platters on the stacks, and some on the table.  Put some large artificial leaves under the platters, and strew some artificial flowers around.   Use paper doilies, and be generous with your use of parsley on the platters!

  5. a simple one i learned in HS cooking class:

    large tortilla roll, sliced tomato, lettuce, mayonnaise, sour cream or ranch dressing and deli sliced turkey, chicken, or ham

    take the tortilla roll, spread with mayo or sour cream, lay the lettuce down, then the tomatoes, and then meat of choice. roll into a "burrito" shaped and stick toothpicks down the length about an inch apart. cut into slices at same width.

    if you're doing it for a party, you can arrange them in a spiral on a bed of romaine lettuce leaves. add a dipping sauce if wanted.

  6. Cheese Log Rolls - EASY!

    30 Flour tortillas                12 OZ shredded cheddar cheese

    Juice of 2 limes                 1/2 cup finely chopped onion

    4 cans green chili juice     1 teaspoon garlic powder

    24 oz cream cheese          8 oz sour cream

    2 tablespoon picante sauce

    Place last 8 ingredients in large bowl & mix well (with a beater).  Spread onto tortillas.  Roll them up & put in fridge overnight.  Cut to preferred length prior to serving.  I usually make "logs" instead of "pinwheels" but either way they taste yummy.   Been using this recipe for at least 10 years & it is always a hit.  I usually serve with guacamole & salsa to dip the "logs" into.

  7. We ordered a fruit tray, cheese tray, veggie tray, taco dip and chips and silver dollar sandwich rolls.

    Taco Dip:

    2 softened cream cheese.

    1 16oz sour cream

    1 packet taco seasoning.

    Mix with mixer. Put in bottom of a cookie sheet. Top with shredded cheese, shredded lettuce, diced tomatoes and green onions. Use the cheese but you can altered the rest to your taste, maybe add black olives. Make 2 of these. Serve with tostitos scoops.

    Whole pineppple into chunks. Slice strawberries. Add whole table grapes no seeds, add chunks of watermelon, and cut oranges in slices cut into triangles. This is best made the night before so that the juices can all run together and stir before serving.

    It is just shaved deli meat , turkey, ham, beef and cheese triangles. You dont have to put lettuce on them, ours did not have it. t. The ones that we had catered just had real butter on them and they had mayo and mustard packets on ice on the side.

    Serve on trays with doily sheets under the cheese, veggie and roll tray.  Serve fruit in pretty crystal bowl.
