  2. Yes they are whether they are from Beetroot or Sugar Beet these leaves can and are edible.

    If the leaves are crisp and tender from a just picked crop then wash them and use them in your mixed leaf salad.  If they are a little older then cook the same as Spinach.

    Beetroot itself is a very underated vegetable.   I lke to scrub the unpeeled raw beetroots.

    Lay each one on a little square of tin foil, season with olive oil and salt and pepper. Wrap them up and bake in a moderate oven until they are tender.  I then peel and dice the beetroot add some cooked red onion and just a splash of red wine.  Cook until the wine evaporated then add some fresh herbs if you like and serve.


  3. Beet leaves are edible and suitable for vegetarians. You can cook them just like Kale, or Mustard green.

    They are tougher than Spinach, and not suitable as raw for salad.

    I chop finely and saute with olive oil, salt, and maybe some bacon.

    They are bitter-but in a good way.
