  1. If I understand the question correctly, I believe you are asking about the taste profile of a cuvee prestige.

    If that is the case, champagne houses can only make a vintage champagne when a vintage is declared.  Otherwise, the juice is used to make NV champagnes, which I believe imo to be excellent values.  

    Methode champenoise is a relatively complex 10-step process, and while a vintage bubbly is fine indeed, quite often for daily quaffing the NVs are excellent choices.

    As far as the style, all champagne houses will always try to craft a wine that has the attributes of a vintage.  The taste profile will depend on the percentages of chardonnay, pinot noir and pinot meunier.

    And off-topic a bit: I highly recommend Gruet blanc de noirs - don't let where it is made (New Mexico) put you off - although it is not a true champagne, it is a methode champenoise that is fabulous for the price (~$14), and is receiving great accolades.
