  1. Their European

  2. I am American of Mexican descent. And Spaniards are Europeans.

  3. The term "Latin" technically means someone who hails from any country in the Western Hemisphere which speaks Spanish.  Spanish is a Latin-based language, hence the term "Latin."  However, because most Latinos in the U.S. are Mexican, and most Mexicans are mestizo (mixed white and Native American) "Latin" implies non-white.  But, Europeans are white, and Spaniards are European.  Therefore, Spaniards are white.

HOWEVER, because Latin/Latino technically refers to language and not race, there is technically no reason not to call Spaniards Latin, or French or Italians for that matter.  Remember also that Hispanic (which is interchangeable with "Latin") refers to language/culture not race.  So you can have white Hispanics, black Hispanics, and so on.
