Are cake flour and pastry flour the same thing?

I have a recipe that calls for cake flour, but I only have pastry flour. Can I substitute?

  1. Hello Cicatrix,

    Cake or pastry flour is made primarily from low-gluten soft wheat flour with a high starch content. Pastry flour has a higher protein content than cake flour. They are very similar. If pastry flour is all you have then try it. I don't think it will make a huge difference.

  2. No they are different, pastry flour makes things flaky like crackers. and flour makes things soft and spongy like cake.

    You could try it but I do not think you will get the results you want
