Is there a difference between the heat of a dried pepper and a fresh pepper or are they the same?

  1. i wouldnt know bc ive never ate a dry one. but once i ate one that was fresh ooo geeeee... it was horrible...

  3. That's a good question. I'm not sure of the answer though. In my opinion, I would tend to think that dried chillies are hotter as all of their "heat membranes" are still in tact. Most of the heat in a chili pepper is contained in the white membrane (and seeds) inside the chili. It is much easier to remove the seeds and membrane when the chili fresh rather than dried, so you can more or less control the heat.

  5. Dried peppers can be as spicy as their fresh counterparts but often when dried the heat is tamed a bit while the flavors are concentrated. Also, during drying there can be chemical changes within the pepper creating a more complex flavor.
