  1. I've constantly read replies in YA from Americans raving about egg rolls but had no clear idea what exactly it was. But going by other replies to this question, it appears to be spring rolls. So where does the egg come in ? The wrappers for authentic spring roll is simply made from a flour & water batter without any egg. And yes these spring rolls are common in Asia, including China, but the Chinese don't think it's anything special to rave about.

Then I saw on another website that said spring rolls use rice paper wrappers while egg rolls use the same rice paper but glazed with egg. No wonder Americans say egg rolls are found in Vietnam as well. Plain see-through rice paper wrappers are a distinctive feature of Vietnamese cuisine, and there's no egg glaze. The Chinese do not make their spring rolls using rice paper wrappers.

This just demonstrates the need to understand significant variations between different ethnic cuisines & not lump them together. To an outsider it seems pretty similar but it means a world of difference to those ethnic groups. To non-Americans, it just appears to be another example of Americans' general ignorance about authentic ethnic foods & getting things mixed up.

And if Americans think that a simple spring roll is that delicious, there are far more tasty rolls & wraps that will blow their minds like a pinball machine hitting the jackpot. For example, try popiah, a Hokkien/Fujian fresh spring roll using paper-thin crepe skins and chockful of ingredients. It's very healthy as it's not deep-fried & the fillings include stuff like boiled turnip & raw veggies. It may not sound like much but the good ones are a real taste treat.

  2. yes, not only in China but most Asian countries. They are served in America and Europe too. Fried egg rolls are originally eaten in Eastern Asia but it has spread throughout the world (Philippines, Mexico, Britain, America and also India) as a staple of Asian cuisine.

  4. It is not americanized food.  Chinese do not call it as egg rolls but spring rolls.  We actually have various kinds of spring rolls in China and it is Chinese food.  It has been hundred of years as a custom that we eat spring rolls in early spring (usually at around 4th March or before that day of our lunar calendar).  The fillings could be of any kind of stir fried vegetables or meat then wrapped with wheat flour sheet (spring roll sheet), rice paper, ..., either eat them raw or wok fried or deep fried them, then serve with various kinds of sauces.
