Are most door to door surveys set up in anthropological research format, or what type of training do they have

To write a good survey you need training in statistics and psychology.  Just asking questions does not mean you will get the information you were hoping for.  Also, there are ways to write the same questions in different ways to make sure each survey is valid.  A lot of surveys are done poorly, and the conclusions are not valid.

Surveys are more likely the purview of Sociologists.  Sociology majors learn how to write good surveys and assemble good data sets with proper collection techniques as well as plenty of statistical analysis and statistics programs like SPSS.
