They use Bamboo Kendo Sticks. You can tell because of how they break & they also provide a better sound, which would make it look more realistic.

I would also say bamboo because 1)they break easily if you get cheap ones 2) because they are cheap 3)you could get seriously hurt trying to break a carbon shinai and carbon shinai's are super expensive, like 10x more expensive than bamboo ones.
