i have an nvq level 3 in aircraft repair and service. never seen a degree in it though. as others have mentioned, a lot of my work was hands on experience. and it still is!

No, one would have to have a hands-on experience to know how to maintain an aircraft. Would you fly on an airplane if you knew that the person that maintained it learned how to do so online? I certainly wouldn't.

Negative. You must be observed by an experienced instructor.

Besides you will have to work on an aircraft engine or airframe. Unless you own these and the tools, test equipment, and inspection hardware already you would gain no skill just reading how to perform a task.
