about clearing the table, the waiter or waitress should never touch a dirty plate. If you touch the dirty plate of the person next to me with hepititus and then serve me!!! Oh Boy

Also speak only when spoken to and keep to a minmum

you should google it- you could check out websites about awards for fine dining establishments...i worked at a restaraunt that was trying to get the DiRONA award...maybe you can look that up and just see the lists of requirements for front of the house...

the customer is ALWAYS right, NEVER say no...ALWAYS have your crumber, NEVER let them pour their own wine....serve from the left - clear (if you don't have a busboy around) from the right...hmmmm...trying to remember more, LOL....

always be pleasant and know how to read your guests- some want you to chat a bit with them, others just want you to serve and leave them alone!!!
