  1. I'm not really sure what you've heard about. My best advice - if you think you're in danger of being assailed, either contact your local authorities or carry a liscensed, legal weapon with which to defend yourself. Even something like pepper spray can aid you.

What you may have heard of is something like Hapkido, which emphasizes many joint lock maneuvers, but most use a lot of force from the entire body, as do most martial arts. You may look for other options before considering hand to hand self defense if you are disabled (No offense meant, just trying to provide realistic analysis of the situation).

  2. I would advise something like Aikido. You use the opponent's momentum and weight against them using circular and harmonious movements.

  3. In addition to the hapkido/aikido mentioned above there are effective weapon systems you could use - I don't have first hand knowledge, but you may want to look into cane (as in walking cane) fighting techniques.

You may also investigate seriously investment and training for non-lethal firearms (civilian Tazers as opposed to military) depending on how severe your knees and back are.
