  1. Been there, still there!

    My husband and I crave dessert about 3x a week while dieting. By dessert I mean something yummy, preferably gooey, sweet and satisfying - oh, and a large portion of it wouldn't hurt either.

    So, I've come up with the following - as a matter of fact we had it tonight. It's one of the few non-chocolate desserts we truly love. Hope you like it:

    Creamy, Gooey, Pineapple, Pudding Whips:

    1 8oz bar of fat free cream cheese (trust me, in this recipe you will not be able to tell the difference between fat free and low fat)

    1 small tub of fat free cool whip (okay, granted, I know it's mostly chemicals but it's fat free - still, everything else in the recipe is healthy).

    0.4 oz (1/2 a regular size box sugar-free instant vanilla pudding mix)

    1/4 cup granulated Splenda

    1/2 cup skim milk

    1 tsp vanilla

    1 20 oz can of crushed pineapple in natural juice (drained)

    In a mixing bowl combine cream cheese, Splenda, milk & pudding mix with with electric beaters until smooth. Add the cool whip and the vanilla & beat for 30 seconds more. Blend in the drained pineapple (reserve the juice for breakfast the next day!).

    Divide dessert between 4 cups for a large amount of dessert or 8 for smaller size desserts. Chill for several hours if you want it to thicken up a bit more. We usually have one right away and the remainder the next night.

    I have served this to company as a pie in a reduced fat graham cracker crust (just need to pop it in the freezer for an hour to firm up some more) and have gotten rave reviews!

    Good luck with your healthy eating!

  2. Some fat free ice cream of your favorite flavor should satisfy that sweet tooth. :)

    Or you can take any dessert recipe and play with the ingredients to make it healthy. Ex: instead of milk, try 2%, instead of eggs use egg substitute, instead of butter use vegetable gee, etc.

    Try these muffins...or search on Martha Stewart everyday food. I love her recipes!

    >>>Banana-Blueberry Cornmeal Muffins<<<

    Makes 1 dozen

        * Vegetable-oil cooking spray

        * 1/2 cup yellow cornmeal, preferably stone ground

        * 1 teaspoon baking powder

        * 1/2 teaspoon baking soda

        * 1/4 teaspoon salt

        * 1 cup plus 2 teaspoons all-purpose flour

        * 1 1/2 cups mashed ripe bananas (from 3 large bananas)

        * 1/2 cup low-fat buttermilk

        * 1 tablespoon brown-rice syrup or honey

        * 1 tablespoon fresh lemon juice

        * 1 large egg

        * 1 teaspoon vanilla extract

        * 1 cup fresh or frozen blueberries

        * 1 1/2 teaspoons sanding sugar or granulated sugar

    Directions

       1. Preheat oven to 375 degrees. Line a standard (12-cup) muffin tin with paper liners; coat liners with cooking spray.

       2. Whisk together cornmeal, baking powder, baking soda, salt, and 1 cup flour. In a large bowl, stir together bananas, buttermilk, rice syrup or honey, lemon juice, egg, and vanilla. Fold cornmeal mixture into banana mixture just until combined. Toss blueberries with remaining 2 teaspoons flour, and gently fold into batter.

       3. Spoon batter into prepared tin, filling to the brims. Sprinkle each muffin with sugar. Bake until a toothpick inserted into center of 1 comes out clean, about 30 minutes. Let cool completely in pan on a wire rack. (Muffins can be stored in an airtight container at room temperature for up to 3 days.)

  3. Fruit salad

    Low fat (check sugar content) yogurt

    no fat milk blended with diet topping

    low fat muffin (once again check sugar)

    Always check the sugar content of "low fat" foods. Often if you compare the calories of the low fat and full fat they are often similar (or more in some case of low fat) as when they take the fat out they bump it up with sugar for taste.

    We're all on a diet.
