The three items you listed are high on the list of the most BORING things to do in Ireland. I could not even begin to list the most interesting things in any logical order.

I would put Behy Bog and Newgrange on the list of things to research before visiting Ireland. I'd include the Bunratty complex only three miles from Shannon Airport. Include the Castle, the pub and the Park. Stay in the Shannon Shamrock and do a night visit to McNamaras.

If you go to Dublin, try the 33 and 44 buses terminal to terminal, on a rambler ticket and maybe throw in the 75 also. (You won't find that gem in any guide book). Visit the rooftop carpark level of the Green Shopping centre and do the centre itself. Take in a Sunday Mass at the pro-catheral. (Nothing to do with religion but it is an uplifting spiritual experience.) Visit Casino Marino for its architectural beauty and absurdity.

Ireland is a very beautiful country with incredible scenery and some of the friendliest people you could ever hope to meet.  If you like natural beauty then there's no shortage of things to see and do.  The mountains, lakes, rivers etc are small in comparison to many countries but they're in perfect proportion to one another and the scenery is ever changing.  The climate too is ever changing and at this time of year is predominately cold and wet but can experience exceptional crisp winters days.  In summer the days are much longer (about 15 hours compared to 8 or so at present) and there's as much chance of a hot, sunny day as there is a cool, wet day so go prepared for all eventualities.

The cities and larger towns are very cosmopolitan and include many excellent hotels, restaurants, clubs and other attractions.

Primarily Ireland is a tranquil place where, outside the major population centres, life proceeds at a more leisurely pace and the locals have time for each other and for visitors.  If you're wanting somewhere to unwind and relax then it's amongst the best places in the world.  If you're wanting something more up tempo then it has it's attractions but they are limited in number.

The most interesting is to go see Charleville Castle even though its an English Castle in Ireland it is very interesting.  The oldest oak tree in Europe is situated on the property.  A druid mound is still preserved on it also.  You can get a tour and if you want to volunteer for some events throughout the year like concerts.
